Nearly 3 years of development, this is a blend of four threads aged in wine barrels between 16 and 24 months including, notably, a fragment of spontaneously fermented citrus beer. Bottle conditioned for 11 months.

This beer is retired; no longer brewed.

Pours a nice 3/4 inch head, dissipates to a ring with minimal lacing after a few minutes.
Nose of lemongrass, flint, (and dill pickles?) Very, very nice.
(I did just finish a dinner of poached salmon with dill!)
Tastes crisp, tart, slight grapefruit. Also very, very nice.
Ah, that mouthfeel!
I don't think I'll be trading any of these any time soon.
To the BA's who put this on your "gots" list before trying it, you don't deserve it.
Boom!

Wine barrel and tartness yet a soft ease of feel that make you quickly want another sip while realizing there is still time to savor. Complex but easy. Citrus. Transcends saison to another level of intricate delight.

750 mL bottle. Lightly hazy orange. Smells of white wine and citrus. Some hay and acidity behind it. Flavor is very citrusy. Bright orange and strong influence from the spontaneous beer. Lots of oak. White wine sweetness in the back end. Medium light body. Delicious. The spontaneous beer is the star of the show here.

Some of Hill Farmsteads finest! Had this bottle along with many others of its caliber for a small group tasting and it was amazing! Need to track down more of this series.

This one pours a nice mostly clear orange/yellow color, with a small head, and no lacing.

Smells incredibly fresh and citrusy, lemon, lime, and orange, with sour white wine, and just a hint of funk.

The spontaneous citrus beer features the most strongly in this one, with *tons* of delicious citrusy character here, lots of lemon and orange, and a hint of sour lime, with a little bit of classic HF-style funk, and a good level of white wine. It's not quite as complex as some of HF's other saisons I've had, but that doesn't detract from how delicious it is.

This is light bodied, airy and pillowy, mouthfeel-wise, with a normal level of carbonation.

I expect nothing but amazingness from this series, and this lived up to those expectations.

Bottle purchased 4/8/16 at brewery. Poured into Belgian tulip glass.

L: Hazy amber clear enough to see lots of rising carbonation bubbles. 2F head, not a lot of retention, little lacing and ring.

S:Light citrus, like grapefruit and lemon peel. Wine barrel and yeast funk. Light malts.

T: Follows nose. Citrus up front, slight bitterness but in line with flavor profile on finish. The citrus beer definitely plays large here.

F: Light to medium bodied, medium carbonation. Incredibly well-balanced and well-constructed.

O: I hated saisons until I started drinking Hill Farmstead and now I have a much better appreciation of them. I honestly think their well water has a lot to do with it, but the effort on this one is extraordinary.

Pours a slightly hazy yellowish orange. It smells amazing. Citrus, maybe some Chardonnay, and a hefty dose of funk on the nose. Lemon, orange, and white wine notes dance on the tongue, with a tart, dry finish. The tartness lingers , leaving me wanting another sip.

Very, very good wild Saison from HF. It's not worth $20 more than a bottle of Arthur, but I'm so glad I bought a bottle of this.
