Notes / Commercial Description:
Elaborative Five was brewed March 2014 with our friend Brad Clark of @jackieosbrewery... A simple wort with wheat, oats and aged hops was slowly cooled under the Greensboro night sky with whole leaf Amarillo hops and rooibos tea. Fermented entirely in oak barrels, the beer was allowed to evolve and establish its own unique character, one that represents the lively, enduring relationship of this collaboration of friends and nature.

This beer is retired; no longer brewed.

375ml bottle poured into a Hill Farmstead taster.

A~ the color changed in every pour! from clear amber to hazy yellow/orange. slight head on every pour and no lacing.

S~ amber malt kind of like Sankt Hans, some hibiscus like Convivial. lemony tartness and some earthy funk.

T~ whoa! amazing lemony funk, earthy tea, barnyard brett, black pepper and a little burnt candied oranges on the back end kind of like Being In Time.

M~ smooth, nice carb and very refreshing!

O~ i did not expect this!! similar to Being In Time but more geuze like with different funk. the tea really rounded it out nicely adding an earthy aspect. would drink over and over!

This one pours a light yellow, with a small head, and a good amount of lacing.

Smells like lemon soaked cheese, super earthy funk, a bit of the tea, leafiness, tobacco, and soft citrus.

This is wonderfully funky, and the tea adds a really cool dimension of funk to this one. It's really, really earthy and herbal, with a leafy tobacco flavor to it, with some lemon and cheesiness, and a a bit of grassiness. The tea isn't super strong, and I'm guessing it provides that sort of tobacco like flavor.

This is lighter bodied, with a good level of carbonation, and a somewhat juicy mouthfeel.

This is a really fun and unique beer.

375ml capped bottle into a Surly teku. Shared with schen9303.

Beer is golden clear. Not much head or lace to speak of but its decent. Nose is yeast, citrus, oak, wet wood and lemon spritz. Tart, lively and aggressive. Delicious! Beer opens green apple, citrus, dried tart prune and lemon sour. Yeasty with hints of Brett, clove and cobweb in the middle. Ends oak and with a puckering acidity. Great complexity and flavor. Beer is light bodied with ample carbonation. Prickly and lively in the mouth and foamy and bone dry going down. Spot on.

This beer brings me back to what Hill Farmstead sours used to be and its glorious! Awesome flavor and complexity with the perfect feel. This beer's worth seeking out.

Bottle: Poured a clear deep golden color ale with a medium foamy head with limited retention and not much lacing. Aroma of tart and funky yeast notes with light Rooibos tea notes also discernible. Taste is mostly dominated by tart and funky notes with some Rooibos tea noticeable with nice floral undertones. Body is about average with medium carbonation. Nice mix of flavours but I was expecting the tea notes to be more apparent.

Big thanks to my friend Bill for grabbing me this bottle.

The slightly hazed, medium amber body was topped by a loose, finger-tall cap of bubbly froth. Fairly poor retention. The head quickly dropped to a clingy ringlet. Bit of streaky lacing along the glass.

The nose was incredibly gueuze-like. Loads of woodsy funk and barrel character. Super oaky. The funk factor on this was definitely an 11. Crisp and fairly tart. Lemony. Some bready malts were also noticeable.

The flavor profile was also really intense. Like the nose, oaky notes came through big time. Loads of lemony tartness and acidly. Subtle crackery malt notes. Bit of funk. As the beer moved along the palate, the lemon notes and the acidity continued to intensify. This beer almost tasted like it contained actual lemon juice. Big, dry oaky notes and tannins on the back end and in the finish. No indication of roobois tea or the dry hopping whatsoever.

Super light, fluffy, frothy mouthfeel. The liquid contained an ultra fine, zippy effervescence that turned soft and supple on the palate. The acidity in the beer felt as if it was stripping the enamel from my teeth.

Elaborative #5 is terrific beer that exhibits many gueuze-like characteristics. That said, the sour factor was a bit too extreme for my palate and the rooibos tea was unfortunately nonexistent. Folks that enjoy super tart, funky and acidic wild ales will likely love this beer.

Bottle enjoyed at Hill Farmstead. Golden amber / copper body with a quarter inch or so of off-white head. Aromas of mineral water, funk, assorted stone fruit. Additional scents of fresh, clean rain. The flavor brings some cheesy funk, fruit. Light lemon acidity. White grape and earth. Complex and terrific. I thoroughly enjoyed this beer.

375 mL bottle. Hazy orange body. Small white head. Smells very citrusy. Stone fruit. Lots of oak and vanilla. Tastes of sharp stone fruit. Very sour. Very oaky. Strong barrel character. Vanilla softens the sourness. If I knew what the tea tasted like, maybe I could claim to taste it. Medium body and carbonation, but heavy sourness. Delicious, but I wish I knew what the tea contributed.

Hazy gold pour, smaller white head. Aroma of fruit, oak, grain, citrus rinds. Citrus up front, peels, rinds, light oak note, light balsamic vinegar, tart and funky. Lighter body. Really grew on me as I drank this.

375ml bottle into a HF wine glass appears clear golden copper with a white head that fades to a thin film leaving spotty lace.

Aroma is acidic smelling yet lemony lactic and slightly fruity/perfume-like with a floral quality. Orange and herbs come out as it warms.

Taste is sour with lemony lactic almost greek yogurt quality and a soft cracker-like and dusty brett aftertaste mingled with floral qualities. The sour bite increases across the finish.

Light in body with modest carbonation. Sour, interesting and enjoyable but likely would not seek out again.
