Notes: Genealogy of Morals, the name of one of our most coveted Nietzschean narratives, also happens to be one our barrel-aged imperial stouts.

After extended aging in select bourbon barrels, we condition the beer atop Kenya Kieni coffee beans sourced and roasted by The Coffee Collective in Denmark.

2016:
After aging 28 months in select Bourbon barrels, we conditioned the beer atop Kenya Kieni coffee beans sourced and roasted by The Coffee Collective in Denmark.

2019:
For this batch, we aged our wheat imperial stout for more than 29 months in select Bourbon barrels, then further conditioned the beer atop Kieni coffee from Nyeri, Kenya, which was sourced and roasted by The Coffee Collective in Copenhagen.

Had at Hill in a share. My third of the 5 GOM series, and I think my favorite, although I'd have to try them again side by side to be sure. Rich dark brown with a golden brown sticky lasting pocky foam head that floats lightly on top as you enjoy this mocha chocolaty delight. Smooth and full on the tongue, awesome!

375ml bottle, poured into a Hill Farmstead oversized wine glass. Enjoyed on 1.1.2017, reviewed from Tasting Journal.

The beer pours an inky, jet black color, like motor oil filling the glass, incredibly opaque and thick with a thin, khaki head, low retention with spots of lace left clinging to the glass. The aroma is beautiful, insane barrel character, tons of oak and bourbon, chocolate, vanilla bean with layered fruit forward coffee beans, stone fruits, very light roast, a bit of char from the barrel, very complex, very rich and super inviting. The flavors are something to behold, tons of smooth chocolate, rich, decadent, bittersweet but the barrel character really shines and elevates this beer. Tons of soft oak, toffee forward bourbon, vanilla marshmallow character is wonderful balanced well by a moderate coffee roast, light acidity from the coffee beans which are again, much more fruit forward, some brown sugar and lingering grain keep this beer in a wonderful balance. The mouthfeel is great, chewy, thick, heavy body, coats very well with just a touch of bubbly carbonation, so soft and smooth at the finish that is lightly warm.

Verdict: A stunning beer from Hill Farmstead. Easily the best barrel aged stout or porter I've had from Hill Farmstead, so complex and delicious. This is definitely not the coffee explosion that many coffee stouts are becoming, it's subtle, nuanced and so well integrated.

375ml bottle poured into a Hill Farmstead taster.

A~ black as night with the smallest head and no lacing.

S~ booze when it was cold and sweet cookie dough as it warmed! along with caramel, vanilla, bourbon, oak, dark chocolate and you can't forget the amazing rich coffee which is most likely contributing to this delicious combination of air.

T_ less booze here, which everyone was hoping for! most of the same flavors come through as in the nose but more rich amazingly smooth coffee.

M~ smooth as could be, silky with minimal carb but perfect for the style!

O~ Kieni wins again! i definitely prefer the BoT one as well. this was super well balance and all around executed. but please! let it WARM up!!!

The appearance was a jet black color. Poured the same too, even had that "glub glub" sound like I was pouring motor oil. Tight cap of a small brown head. Remnants of a concave lace. The aroma had thick milk chocolate/fudge-like, black licorice sweetness, coffee creamer, sweet wood, and a nice roast to round it all out. The flavor seemed to bring everything together pretty nice, mainly the sweet at first and then wrapped together the roastiness in for a sly balance. Aftertaste seemed to have a touch of the "spiciness" from the black licorice and brought the sweet wood and chocolate in nicely. Finished somewhat sticky but acceptable, I was actually expecting that. The palate was medium bodied with a pure sipping quality about it. No ifs, ands, or buts, anything who gulps will wake up with diabetes, I’m guessing. Carbonation seemed a bit under but I was expecting that due to the other observations. Overall, well, damn, if that wasn’t a treat or what?

on nose is very robust bourbon barrel character that brings sweetness of thick chewy caramel and toffee, chocolate, mellow dark fruit and roast. the palate is much the same with a bourbon soaked fudge quality throughout that is complimented by a roasty coffee note that brings just a touch of bitterness and some dark fruits. there is chocolate, toffee, caramel, vanilla, and molasses in abundance, some raisin, dark fruit, and mellow acidity hinting at blueberry in there.

as it warms and has been open for an hour or so, it becomes insanely complex - bittersweet coco powder, chocolate covered blueberries, thick chewy vanilla, roasty bitterness and a spicy hit of bourbon leading the way. again hill farmstead manages to brew an incredibly robust and complex beer that still manages to come off as balanced and drinkable because of how well integrated the flavors are, just perfect!
