Genealogy of Morals - Coffee Collective: Akmel Nuri is an imperial stout brewed with coffee and aged in bourbon barrels. We have chosen two barrels of our wheat imperial stout, Genealogy of Morals, as the base for a series of single origin coffee experiments. After aging 20 months in select bourbon barrels, we conditioned the beer atop Akmel Nuri's Ethiopian coffee beans sourced and roasted by The Coffee Collective in Copenhagen, Denmark. These friends long ago changed our worldview as to what Coffee could be. After months of bottle conditioning, the beer is ready for release.

375 mL bottle. Black body with a small khaki head. Smells of bourbon, earthy coffee, a hint of coffee acidity. Sweet, but nothing like the Kieni. Tastes of earthy and rich coffee, sharp bourbon lends a hefty alcohol bite. Rich dark chocolate. Coffee lingers into the back end. Medium carbonation, heavy, and a little sweet. Head and shoulders above Kieni. This is a much better representation of Genealogy.

This one pours a very dark black color, with a very small head, and not much lacing.
This smells like roasted malt, caramel, hazelnut, vanilla, oak, leather, and dark chocolate.
This has held up extremely well for a coffee stout from late 2016. There's a nice spice and oak from the barrel, with a caramel, hazelnut, and dark chocolate flavor from the coffee here. There's also a bit of brown sugar and maybe even maple.
This is medium bodied, silky, and with very little carbonation. It's not super thick, but it's rich and velvety still.
Hill Farmstead knows how to pick a good coffee to pair with their stouts. This is a wonderful series.

Poured from a 375 ml bottle dated 2016 into the test glass.
A - Inky black, thin mocha cap changes to a ring of evidence in support of the experience.
S - Broad leaf tobacco, bakers chocolate, blackberry reduction, hint of anise, broad chocolate notes as it warms. Barrel touch adds a thin vanilla and toasted oak element
T - Complex, with coffee the hard part to unravel, roast is medium i would guess, adding those berry notes. Barrel treatment adds those vanilins, balanced with the cocoa elements of the base offering they move toward the Port wine direction with the alcohol still quite present and pleasant.
M - Big and slick, with a pleasantly delicate finish. Coffee dry in the linger
O - A beautiful offering from HFB, the base Genealogy is a favorite, this coffee variant adds a layer that takes time for exploration.

Drank from a 375ml bottle purchased at Hill Farmstead Brewery, Greensboro Bend, VT

Oily, pitch black appearance. Medium viscosity for the style. The body was capped by foamy, two-finger tall, saddle brown head that quickly fell to a thick, bubbly mass. Streaky, spotty lacing trickled all down the glass.
The aroma was really rich and complex. Big roasted malt presence. Some raw cacao too. Quite boozy with strong bourbon notes. There was a fairly intense oxidative quality as well. A bit Port-like. Dry, powdery, yeasty notes were also apparent. Touch of espresso. The coffee presence was unfortunately far more restrained than I anticipated.
The flavor profile was rich and complex and very similar to the nose. Fairly roasty up front. Bourbon notes were also quite apparent. Boozy but not excessively so. Raw cacao nibs appeared in the center. Subtle oxidative notes. Touch of espresso. More roast and bourbon on the back end and in the finish. Moderate amount of lingering, roasty bitterness.
Fantastic creamy, frothy mouthfeel. Super slick and smooth on the palate. This beer definitely felt like it was brewed with a large percentage of oats. Medium-light bodied for the style. Perhaps a touch thin but pretty standard for a Hill Farmstead imperial stout. The liquid contained a fine, frothy, tongue blanketing effervescence.
I usually try to avoid aged coffee stouts, but this 2016 vintage of Genealogy of Morals aged on Coffee Collective’s Akmel Nuri coffee beans was definitely calling my name. While the coffee seemed to have really faded and also came across as roaster than I anticipated, the aging process seemed to have transformed this into something very unique and complex. Despite the steep ($33) price point, I was really glad I pulled the trigger on this.

Poured at 50-55 degrees F.
Moderate to vigorous pour yields an almost two inch tan head over a dark, dark brown body with some lacing. Nose of bourbon, roasted malt, coffee, oak, dark fruit and bittersweet chocolate. Taste mirrors nose with the dark fruit and coffee moving forward. Mouth-filling, velvety feel and overall, another world class imperial stout from Greensboro Bend. Cheers!

Nose of bourbon, roasted malt, coffee, oak, dark fruit and bittersweet chocolate. Taste mirrors nose with the dark fruit and coffee moving forward. Mouth-filling, velvety feel and overall, another world class imperial stout from Greensboro Bend. Cheers!

375ml bottle, part of the Collected Works 2017, poured into a Hill Farmstead oversized wine glass. Enjoyed on 4.6.17, reviewed from Tasting Journal.
The beer pours a nice jet black color, very opaque with a thick tan head, good retention and nice swatches of lace. The aroma is interesting, lots of fruity coffee, pitted stone fruits, mild acidity, dark chocolate, light bourbon, smooth oak with a hint of smoke and vanilla that lingers. The flavors offer more chocolate with nice vanilla layers with a very smooth coffee bean profile, a touch of roast, light smoke from the barrel plays well with the coffee, but the coffee brings out lots of fruit flavors, plums, figs, cherry, mild acidity with soft smooth bourbon washing over the palate as it finishes. The mouthfeel is good, coating, thick full body with a very creamy and soft finish.
Verdict: A good barrel aged stout from Hill Farmstead. The coffee character is nice, lots of fruit, a hint of acidity offers some balance to the rich flavors. It's not quite as decadent and refined as the Kyeni coffee variant was, but this was a really nice beer.

T~ follows the nose with more zesty black pepper and a little bell pepper but it doesn't take away from it... thankfully. a ton more vanilla and caramel on the back end pulling it all together!
M~ smooth, nice carb for the style but a little clawing. almost like taking a spoon of honey.
