Civil Disobedience, our nonviolent protest against the homogenization of flavor, comes in the form of a spontaneous, circumstantial and unpredicted series of beer releases. We relinquish control in favor of an anarchistic collaboration of microbial activity. This is the expression of our conscience, our opposition to oppression and an act of creative freedom.
Civil Disobedience 21 is composed of beers from a diversity of barrels ranging from 10 to 25 months of age—including Anna, Elaborative 4 and a mélange of Leaves of Grass—then bottle conditioned for over 10 months, resulting in a delicate yet complex beer that represents its individual elements as a seamless panorama.

750ml bottle at share.Medium golden pour with a small, frothy white head. Aroma is tart, yeasty and funk. Taste brings light notes of lemon peel, and more of the mellow tartness.

Reminds me of a lambic, real nice complexity, tart, funky, dusty oak, light juicy apricot orange citrusy flavor, spice, hay, earthiness

750ml capped bottle. Served in a HF stemmed glass. Lighter caramel body, or a darker orange body, take your pick. One finger white head, plenty of lacing, fair retention. Smell is freshly squeezed lemon, citrus zest, light honey, a bit of white wine grape, mild lactic tartness, touch of caramel. It's essentially a different take on a blended saison; a bit more lactic on the palate than other Hill Farmstead beers which usually tend to skew more towards acetic. Lemon, grapefruit zest, sweet caramel, a touch of wheat, slight leathery Brett. A nice complexity to this. Mouthfeel is medium bodied, soft and appropriately carbonated, very easy to drink but also mildly difficult to just chug your way through this without pondering it. Another well-executed blended saison from Hill Farmstead. Not their best in the series, but overall a very good Vermont saison.

750 mL bottle. Clear golden with a small white head. Smells of white wine, some stone fruit acidity, and vanilla oakiness. Taste follows suite. Strong white wine and stone fruit tartness. Wine flavor builds and there's a spike in fruitiness and oak in the back end. Medium body. Excellent, but strong barrel character.
