Draft at the brewery
Big pillowy fluffy head, great retention, tons of lacing, semi hazy pale blonde color

Nose big farmhouse Brett funk, little cheesy funk, citrus, lemon zest, tangerine, hint of white wine, more juicy tangerine as it warms

Taste grassy hops hot first like fresh dry hop, into the citrus, tangerine up front, into a little lemony tart funky note, some Brett farmhouse funk, turning a touch herbal spicy hop late, mild white wine but don't really get barrel, quite juicy throughout, little bitterness on the semi dry finish, but flemmy

Mouth is med to lighter bod, med to higher carb

A- Slightly hazy golden yellow pour from the 750ml to a becher glass. Small foamy head and a small ring at the edges. Spotty lace.

S- Even at several years old the hops come through with citrus, melon, mango, passionfruit and floral notes. Wine and lactic sours and lemon are big with white wine coming to mind. Vinous grapes, soft medium oak and some mustiness. Good wine and hop balance struck by the sours.

T- Lots of great wine notes coming through big in the flavor. Grapes and vinous oak lead into floral and citrus hops which are much more diminished in the flavor. Fairly sour but not in your face straight lactic acid notes by any means. Grape stems, must, wood, apple, pineapple and herbal notes.

MF- Medium bodied overall with a smooth and creamy texture. Not hefty but silky and soft creaminess with medium high carbonation. Ends moderately sour.

The wine barrel is big and the hops still come through 2 years later. Very much vinous and oaky with some solid hops, mustiness, fruit and stemmy notes.

750ml bottle, April 4, 2019 bottling date, poured into a stemless wine glass.

The beer pours an orange amber color, cloudy complexion with a nice foamy white head, about two fingers tall with excellent retention and lacing. The aroma is nice, lots of pine, grapefruit peel, pineapple, candied hop, funk, oak, pale dough, mineral water and a nice lingering floral and grassy quality. The flavors are good, lots of pine and dank grassiness, lightly floral with a nice tart citrus bite, some tangy tropical fruits, candied hop, light funk and musty oak with a solid base of pale dough and mineral water. The mouthfeel is good, lively medium body that is very crisp and coating with a slightly tart and dry finish.

Verdict: A very nice IPA from Hill Farmstead. Funky, hoppy, rustic, it has a wide breadth of flavors while also offering a nice balance and good depth.

L -- Lightly hazy golden straw body with a finger of dense white head that lasts forever... Pretty classic Hill Farmstead appearance
S -- Really big notes of pineapple, and some barnyard funk. A bit of dried lemon peel, herbal woodsy hop, perfumed floral. Very nice
T -- The mixed fermentation profiles that Hill develops are always spot on. Nice balance between a light, clean acidity and some more nuanced bretty funk without any of that crushed aspirin character. The simcoe hops make themselves known without dominating the brew -- again, I'm getting some really nice pineapple notes. The drying astringency of the white wine barrel character brings it all together
F -- Crisp and clean. Super drinkable

Poured from the 750 ml bottle into the test glass.
A - Deep yellow color, gentle carbonation works topside, determined and relentless. A thin constatnt white rong shows thier work.
S - Candied lemon peel, apricot, some dried pineapple as well, There is an herbal aspect thats strong and lily driven
T - All those fruits are up front, a thread of earthy grass is there as well, Love the smooth transition beetwen the threads of this offering.
M - Soft on the palate, carbonation adds a layer of soft waves , sweet and a bit lemony bitter. Just lovely in this aspect
O - Well I regret not buying a second bottle! A beautiful treatment of this hop, the wine barrel treatment is gentle.
A beer worth every effort to enjoy
