Florence (1915-1967) was our grandfather’s sister, and Hill Farmstead Brewery rests upon the land that was once home to her and her 13 siblings. In her honor, this Belgian inspired Wheat ale is crafted from American malted barley, Organic Vermont wheat, European and American hops, our distinctive farmhouse yeast and water from our well. It is unfiltered and naturally carbonated. Soft, cloudy, and fresh, this is the ale that I dream to have shared with Florence.

BOTTLED 2019 08 22. Poured into my BA 25th Anniversary teku — hell yeah!!
A: Crystal clear bright gold with 1-finger stark white foamy head with decent retention and a thin line of lacing.
S: Aroma is classic saison with light phenol and bubble gum, grassy herbal honeysuckle , light pine, and lighter bready pils notes.
T: Flavor is also very classic saison with crisp pils malt laying a palette for pine, lemon, white grapefruit, herbal noble hop, and light grassiness in the finish. Light bubble gum esters. Bitterness is light-medium and helps with the crispness. Lightly acidic-tart.
M: Light body with super-crisp feel and very dry finish helped by the tartness without seeming watery.
O: Florence is an excellent classic saison with subtle complexity of aroma and flavor and excellent feel that is light, crisp, and very dry with high effervescence to complete a beautiful saison experience.

Popped for getting accepted into KU's MBA program! Bottle received in a trade. Appears to have been bottled. Let it sit at RT for almost 30 minutes before drinking. Poured into Spiegelau's wheat beer glass. Bottle date appears to be 01/04/2024, consumed 08/06/25.
A&S: A very different looking beer in the first half than during the second half of the pour. It starts as an almost transparent, pale yellow beer with a fizzy white head that pours around a finger and a quarter and dies fairly quickly without lacing. The second pour morphs it into an opaque light orange with the addition of the sediment. The second half of this beer also has head retention and lacing. The aroma is sweet and floral. I also get some green apple, oak, chappengne,
T&M: The taste includes tart cherries, dragonfruit, peaches, lime, and a touch of oak. Bubblegum in the finish. Incredibly drinkable (very slightly less so later on). I get a slight earthy hop bitterness in the second pour that isn't there in the first. As expected no alcohol. Between a dry and semi-dry finish. The mouthfeel, very similar to a lot of their beers I have tried, light, soft, but lively with carbonation. It is not a prickly mouthfeel, just a light sting.
Overall: A tale of two halves for this beer. I don't know where Hill Farmstead stands on this for their beers. For this one, I think I might like the non-sediment version better for most aspects, but man, this brewery and this beer are just so dang good either way. I am so impressed with all of their saisons, and this one is right up there as well. I was surprised to find, after the fact, this is my highest rated from Hill Farmstead. It's probably closer to equivent to some of the others, but still so good.

On draft. There was hardly any head, all that stuck around was on the very edges of the glass. It was a light straw color and a little hazy. A very distinct sharp earthy aroma. Taste was tart, clean and crisp with no lingering funk. A really good Saison.
