Florence (1915-1967) was our grandfather’s sister, and Hill Farmstead Brewery rests upon the land that was once home to her and her 13 siblings. In her honor, this Belgian inspired Wheat ale is crafted from American malted barley, Organic Vermont wheat, European and American hops, our distinctive farmhouse yeast and water from our well. It is unfiltered and naturally carbonated. Soft, cloudy, and fresh, this is the ale that I dream to have shared with Florence.

On tap at DeCiccos Armonk - into tulip. (very generous pour!)

Amazing...dry, tart, citrus, a bit of funk...smooth. Really an amazing Saison. Wish I could drink regularly (of course).

Poured from a 750ml bottle into a teal Hill Farmstead stemmed glass. Purchased at the brewery a few weeks ago. April batch.

Pours a hazy golden orange body with a nice frothy 2 finger white head that reduces to little retention and leaves no lacing.

Characteristic saison aromas emanate from this beer - farmhouse funk, citrus, wheat, light fruitiness and banana, green apple.

On the tongue is a delicate balance of tartness and flavor - very tart upfront, sour apple and fresh citrus, on the follow through is wheat and a light fruitiness, light banana, some mineral character, finish is dry and clean. Medium-high carbonation, medium-light body with a nice refreshing, crisp mouthfeel.

This is probably my favorite HF "shelf" saison. Really balanced and drinkable.

Appearance: Pours a cloudy goldenstraw capped by a full three fingers; excellent stickage and copious amounts of lacing

Smell: Tangy wheat, tart lemon, coriander spice, lactic tones and barnyard funk

Taste: Wheat bread flavors in the background, but the tart lemon and lactic tones take over from the outset; coriander and funk elements intrude, in the middle; the spices and lactic aspect grow bolder in the finish, leaving a chalky aftertaste

Mouthfeel: Medium body with moderate carbonation

Overall: A flavorful Brett beer with a nice lactic, spicy character

Probably my least favorite of the HF saisons, but that's like the least hot gal in the miss america pageant. Cheweier than most, good lemon and funk up front. It's a good beer, but when compared to the other HF offerings, it loses some points because you know what the ceiling is for the style.

July '14 bottling coming up on almost a year old so time to review. Poured into a matching large HF wine glass the brew appears a clear pale golden yellow color with a white froth and patchy lace.

The smell is tart almost like lemon grass and earthy wheat. Some sulfur towards the backend. Overall the smell is pleasant.

The taste is lemony with a slight undernote of unidentifiable fruity character that blends to tartness contrasted by mild bitterness and earth. A wheat-like grain sweetness is the last thing noted.

This is medium to light bodied, moderately carbonated and overall just a nice balance and very enjoyable brew. No frills or fluff about it, I could drink this by the gallon.

750mL bottle poured into a snifter.

A- thin wispy pale white head. Glowing golden body with a bit of cloudiness. 4.5

S- Tart and lemony aroma, very light floral aspect. A bit of that cat piss deal. Smells great though. 4.5

T- Lemony as all hell, tart like lacto, light sweetness like molasses briefly appears and then is gone. Curiously there's a plastic like flavor and funk to this. Interesting. 4.25

M- Tart, light-drinking, well-carbonated with a clean, minerally finish. 4.25

Great brew. I get some off-flavors here and they affect the feel a bit, but this is still quite enjoyable.

A: Pours a slightly cloudy, chalky, light golden color with a fluffy bright white head faded to a fuzzy collar and soft film. Very active carbonation.
S/T: Light and crisp smelling. Bright and light wheat notes, soft yeast, and lightly tart with notes of slight tart green apple.
M: Super soft fluffy and airy carbonation, very smooth and clean. Crisp mouthfeel.
O: Very light, crisp, and refreshing.

batch 7/2014
A: Staw colored with a thick white head. Lots of carbonation, leaves a bunch of lacing on the side of the glass.
S: The smell is amazing right now, cloves and lemons, some faint banana-y esters on the end. Really great.
T: Light and lemony, has a little funk going on and a nice bit of wheat in the finish. The HF house strain is really shining in this one.
M: Fluffy. I think could lay my head down and take a nap.

This one really got a bit more tart since I last opened one. Drinking perfect right now, wasn't crazy about this batch at first but some time has done it well!

IMO, the best of the HF saison bunch, due to its restraint. Great lightness of feel and eased off sourness lets the brew sing and shine. I understand everyone is gaga for sour saisons these days, but HF's can sometimes go overboard in that area. This one strikes the perfect balance.

Bottle Date November 2014

L - Pours a golden/straw body with a one finger eggshell head that really lingers around. Really a beautiful body.

S - Lemon and earthy at first that evolves into a mild brett character along with some wheat grain. Outstanding smell on the nose.

T - So much lemon, wheat, bread and funk in here. A bit of spices (clove & white pepper?). The tartness is on the mild side.

F - Body is light and the carbonation is high. So crisp on the mouth.

O - Definitely worth the price of admission or trade. Glad I got to try it as this beer is hitting on all cylinders for me.

A clear straw yellow with a dense white head with excellent retention that leaves sheets of lacing, this looks spectacular. The nose is sublime. Doughy, earthy, lemony and tart with a blend of lactic acid and a mild but deep Brett funk, this beer is outstanding. Hops are noticeable with a mellow lemony aroma, the base saison is subtle but resplendent, the funk is exquisitely expressed, with the mushroom character pairing exceptionally well with the grainy wheat.

The palate opens bright, tart and bread like with lemon, a little yogurt, a clean and crisp cracker like wheat flavor and texture. The mid palate has flavors of grain, mild hop bitterness, moderate hop flavor before a long, drying and bright finish. Mild spice, especially a blend of juniper, white pepper and orange peel. A little sulfur is present too, though it complements the palate perfectly. Clean, crisp, this beer is refined beyond anything I can remember having recently. Outstanding.

Pours a hazy bright yellow color with one finger of bright white head and high carbonation evident. Lots of brett, citrus, wheat, grains. Taste has more spices, cloves, wheat, and bread. Medium body and moderate carbonation. Very nice.

Overall I thought this was a very good beer. The nose is great and while the taste is a bit mellower and not as complex, it is very good. Well worth checking out.

Hazy lemon gold. Brett b. trois funk, light fruity ethyl acetate on nose. Pils sweetness leads, some pineapple, lactic sour finish, no bitterness. Dry, soft in the mouth. Excellent beer, I'd love to try it in summer

A: Pours a slightly hazed, pale straw yellow color. A two finger white head forms with good retention and lace.
S: A basement like musty aroma up front. Earthy and peppery yeast. A light mineral character, lemon rind and citrus fruits. I really love the yeast character here.
T: Like the nose, musty, earthy, and peppery yeast. A more up front tartness than I was expecting, which is just fine. Lemon rind and citrus flavors, even a bit of white grapes. The yeast, and simple tart fruit flavors intermingle perfectly.
M/D: A light body that is effervescent. Beautiful crisp carbonation that is smooth at the same time, dry and refreshing. Really easy and enjoyable to drink. Wish I could get some more.

Reminds me a bit of Jolly Pumpkin Weizen Bam. Like that beer, fairly simple, but everything is really well integrated, and the rustic yeast just shines. Really well done.

Served on-tap at Al's of Hampden. Pours hazy golden yellow with a one finger tall white head, quickly dissipating down to a light ring around the edge, leaving very little if any lace on the glass.

Smells of bready wheat, earthen minerals, light musty funk, some yogurt and some lemon zest. Taste is pretty straight forward. Wheat and lemon zest up front with some yogurt, musty funk and the typical HF mineral rounds it all out. Tart, slightly chewy feel from start to finish.

Overall a solid saison. Don't get me wrong, I would never turn it down, but I definitely think some of the others are just better.

Soft sunshine in the glass. Citrus and a bit of funk on the nose. Lemon rind, minerals, tart citrus and some dusty hay. This beer is definitely underrated. Light, refreshing and tasty. Seek this out.

Awesome balance of lemon/lime, funk, yeast, and wheat. Great beer! As far as their standard saisons are concerned, this just may be my favorite...just hit me in all the right ways.

Tasted against Arthur, Anna, and Brother Soigne. Of the four, I ranked this one 4th.

Quite tart and more funky than the rest. Get a strong lemon presence. Just not as complex and interesting as the others. Still a fantastic saison.

750 ml bottled July 2014. Served in a Tired Hands 2nd anniversary glass.

Appearance: Pours a pale yellow color with 3 fingers of a white fluffy head with good retention. Body is lightly hazy but transparent with moderate visible carbonation.

Smell: Wheat, lemon, light peppery yeast, white grape, apple and a faint clean lactic character.

Taste: Tart mild sourness throughout. Wheat base is clearly noticeable along with lemon, white grape, light bready malt, and just a touch of funk with a hint of bitterness. Almost a a bit of a pilsner like quality in the finish.

Mouthfeel: Light/medium bodied and crisp with a soft mouthfeel. Carbonation is on the higher side of medium. Finishes dry.

Overall: Another excellent beer from Hill Farmstead. Tasty, balanced, refreshing, drinkable, awesome.

750 ml bottle received as an extra from a killer trader. Thanks buddy! Pours very light yellow, almost perfectly clear, with a huge fluffy white head on top. Aroma of lemons, grass, barnyard funk, yeast esters, strong hop presence, spice, some definite tartness. Flavor is tart fruits, lemons, grapefruit, grass, some hop bitterness, somewhat acidic, major funk, dry, with a crisp finish. Light bodied, prickly carbonation, and tart dry finish. Interesting brew--only my 2nd from HF--and not what I expected. The tartness note here is pretty unique and very nice. Worth a try, though I was hoping for a little more sweetness and spice from this one. But that’s just my personal taste, and there’s nothing I can find that’s wrong with this. Crisp and super clean brew. Nicely done.

Trying for the second time now, and really digging this one. Like it better than any of the other HF saisons I have had. Good stuff with a bit more sweetness than the likes of Anna/Arthur/Dorothy.

750 mL bottle obtained on trade(thanks as always, GMRFx!), bottled "07 2014;" poured into my 8 oz. Tired Hands glass and drank over 30 minutes

A: 3/3 - pale yellow-to-golden coloration; murky/hazy (cannot read or see through); received with an initial frothy white head that settled into a subtle glass lacing; small visible bubbles pouring off the bottom of the glass

S: 10/12 - predominately lemon and lime zest; some peppery/spicy Belgian yeast, pils and wheat with some alcohol

T: 18/20 - bright, refreshing lemon flavors immediately hit on first sip and continue to develop on the palate; as the flavor profile expands; there is a tartness without funkiness that becomes the predominate flavor; some mild alcohol on the back of the palate, but finishes dry and inviting

M: 4/5 - medium-to-high carbonation; light body

O: 9/10 - excellent Grisette-style wheat saison; just love the tart/sour qualities of their saisons that are perfectly in balance - present, flavorful but don't overpower the base beer; I've had Arthur before and this is right up there with it - world class and highly recommended

Poured from a bottle dated 20150504 into the modified tulip glass.
A - Wonderfully clear, steady stream of carbonation feeds into a monstrous pillow of froth, lacing of the finest style.
S - Ash, lemon, a very lite grian quality feeds a fine Chablis styled nose.
T - Delicate and delightful, a wonderful start feeds a fine dry finish,flavors are in a tight band and represent
true craft. White wine like, with enough carbonation to differentiate. Te flavors are centered araound a fine rime wash cheese, lemon drop, and slightly salty minerals.
O - Simply stunning in the simple complexity. Ya I know. The lemon, bright and dry finish are the finest points .

Big thanks to DHack22 for hooking me up with this beauty. It has a great clean orange to yellow hue with great lacing and a great crisp aroma with a touch of funk from the Brett. The taste was more tart than I even expected, with a nice amount of lemon, pepper, wheat, honey, and maybe a touch of some other spice like oregano. Feel is very bubbly, almost champagne like which makes a lot of sense with the flavors present. Dry feel in the aftertaste. Yet another well made beer from HF!

A - pours out a nice slightly hazy straw yellow. Foamy white head that dissapates rather quickly.

S - A little bit funky, wheat, a little saline, and lemon water.

T - A touch of lemon and slightly tart. Clean and smooth. A little more bitter on the finish then I would like. Very easy drinking beer.

M - Great mouth feel. Light, with lively carbonation.

O - Great saison. One of the best that I have had.
