Each harvest season, we choose various barrels of our Farmstead® ales that exhibit sympathetic characteristics for pairing with local fruit varieties, in this case, organic plums from the 2021 harvest season at Elmore Roots Nursery in nearby Elmore, Vt. Once again, the care and intentionality with which David and his team work with the land translates fully into the fruit’s seasonal expression each year, especially with these varieties of plums. Regardless of the base beer’s composition or blend, the ideal outcome remains the same: a thoughtful representation of the fruit in season and one of our favorite offerings within this collection.

Bottle at Arch Bridge.
Paired with the lambic, the sweeter, more grain forward base is apparent and welcome. Juicy plum with lovely fragrance. Dried out and tart. Mild acidity. Fruity with softly spicy yeast pairing nicely with the fruit.

A 375ml bottle, plums 2021 harvest, bottle conditioned since March 23, 2022, poured into a Tilquin stemmed glass.
Appearance: A hazy orange pinkish colour, with a one finger white head that had good retention and left some nice lacing.
Aroma: Tart, plum, plum skin, grapefruit rind, citrus zesty, oak.
Taste: Lightly sour, tart, plum, grapefruit rind and zest, oak, slight tropical notes, funk, with a light salty touch on the finish.
Mouthfeel: Light to medium bodied with moderate to high carbonation.
Overall: A very enjoyable and really easy to drink fruited Saison, with balanced plum flavours.

Pours the color of a white peach, soft and fluffy 1" head that stays in streaks and pockets. Nose is funky and acetic with lots of stone fruit; it leans more apricot than plum to me, but it does track as an underripe and tart plum. Taste is nicely tart but not bracing; tannic stone fruit with a mild sweetness (again, apricot to me); tartness lingers and makes my mouth water. Feel is light but very crisp and refreshing. A really nice tart fruit beer.

500ml bottle served in a tulip. Pours a dull orange hue with a slight haze to the clarity and a loose, off-white head that quickly dissipates into a fizzy skim. Nose is quite nice - suggestions of tartness and stone fruit. Taste is tart (acetic acid?) with a hint of yeast in the background. All suggestions of fruit are gone. Mouthfeel is light in body with a lively carbonation and an assertive astringency. Overall, decent but not much complexity. More Wild Ale than Saison.

Murky rose orange appearance with little to no head. Nose and palate are definately plum, with slight funk and mineral water. Mouthfeel is light to moderate, good carbonation.
