Mimosa began as an idea: a beer inspired by our obsession with citrus. We built a recipe comprised of our favorite ingredients: Local organic raw wheat, Citra and Galaxy hops, Brettanomyces, and a healthy addition of fresh citrus zest. Mimosa was conditioned for 8 months in wine barrels with our resident microflora. 19º Plato 500 icus.

Bottle: Poured a cloudy orangey color ale with a large foamy head with light retention and light lacing. Aroma of citrus with some light funky notes and floral undertones is quite nice. Taste is also a nice mix of citrus forward flavors with some light funky notes and very light acidic notes. Body is full with good carbonation. Wonderful to see how well this bottle aged.

From notes I finally found. Amazing beer, the depth of the flavor from champagne, tannins, citrus, bubbles to the creativity needed to make this beer just something you can't forget. Loved the funk here somehow balanced with the clean flavor. My first HF beer and mind blowing.

A - Medium orange color with a very thick, creamy, frothy white head.
S - Funky orange, citrus, tartness.
T - Tart funky orange, some wild acidity, oak, and very complex.
M - Medium heavy body, light to no carbonation, some alcohol warming on the way down, coagulates the saliva.
O - This is pretty good. ;o)

Big creamy foamy head, messy lacing, hazy murky golden yellow.
Nose big Brett funk, farmhouse funk, tropical citrus in the background, big orange zest, lime zest, lots of nice citrus, tangerine hint phenolic yeast, peppery like, little sweet malt.
Taste starts with tart citrus, orange zest, rind, lime notes, big orange rind zest champagne like effervescence right into mimosa, fresh sticky outrage juice, mild Brett funk in the background, little tropical pineapple like, juicy citrus fruit etc. Mild peppery phenols, tangerine, and barnyard funk late. Little bitterness and little tartness. Sticky finish, little flemmy tartness, little bitter rind but tons of orange juice and tropical pineapple notes.
Mouth is med bod, juicy flesh notes, decent carb.
Overall awesome.

Poured out as a nice looking clear orange color with a thin white head on top. The smell has started to fade a bit since it was fresh but still has some citrusy lactic elements coming off of it. The taste of the beer is pretty good, some nice orange citrus in there with a bit of funk to finish it off, it does remind me of an actual Mimosa to some extent. The feel is light bodied and nicely carbonated. Overall this beer is very nice, quite shocked that I even got to try it.
