(SRM 4-7). Clear gold to light amber. Tiny bubbles flow in columns while a short-lived, half-inch, off-white head forms a pancake batter lid. The head diminishes to a creamy ring, leaving no lace until sipping, when it leaves brief archipelagos floating on a fine, viscous film.

The aroma is sweet and malty with a defined Belgian farm funk. Floral hops are quite evident, with a backdrop of spiciness. The beer is crisp and warms to reveal sourdough.

The flavor opens with coriander, then follows the nose with elegant complexity. Lots of fermenting orchard fruit adds to a sweet/bitter balance. The finish is long and dry.

A full body and smooth, soft texture. Alcohol is about as expected, with a nice nibble. Effervescence coats the tongue.

This is a pleasant evening beer with its crisp and fresh qualities. I found it paired well with a cool Autumn evening.

Appearance is a cloudy, banana-colored beer, with a thin white head. I get a fair amount of lace; head retention is low.

Aromas have funky Belgian yeast spice notes, plus fruits and sweet malts, and a floral hop character.

The taste is full of rich flavors, with fruity and spice notes, plus some citrus tartness. Moderately sweet at the start and then some earthy hop bitterness comes into play.

Mouthfeel is highly carbonated on a medium body. The finish is initially fruity and sweet but is ultimately dry. Features some warming of the alcohol.

LOOK: Hazed golden yellow

SMELL: Lemon zest, strawberry taffy, doughy grain, yeast, wildflowers, rose water

TASTE: Clean grain, boozy, candied fruit, leafy hops, harsh medicinal herb, yeast, faint broth, dry, mineral, dried grass

Chaos in this bottle, but perhaps not enough to be given a demonic name. It’s certainly out there, and the flavors play off of each other quite well. We're thinking a nice stinky Stilton would work here with a bit of fig butter to create an epic pairing.

An excellent Belgian-Style Ale, brewed in the unlikely home of a very good Belgian Ale...Southern West Virginia. Available in a hefty 750 ml bottle

A very big, well balanced beer that pours beautifully, with a huge white head. Nose is fruity/spicy. High carbonation levels are expected and help cut through the sweetness of the malt.

I was lucky enough to have forgotten a bottle of this and let it age in the fridge for 6 months. On a warm day, I found it, sat on my deck by the Ohio River and poured a tall glass. The flavors had melded in such a way that all the flavors acted together to provide one of my most pleasurable drinking moments of 2011.
