For the fourth installment in our “Beast” series, Sir Walter Scott has finally tamed the creature, who was about to attack a group of innocent unicorns. To celebrate, we blended 1/3 Undead Party Crasher aged in bourbon barrels, 1/3 Blaecorn Unidgragon aged in scotch barrels and 1/3 Billionaire aged in scotch barrels. Hooray!

Look - pours a muddled dark brown color with a finger-sized off-white head. Little retention and little lace.
Smell - bourbon, alcohol, chocolate, licorice
Taste - oak, chocolate, caramel, toffee, booze, butterscotch, some heat.
Feel - heavy-medium body, creamy on the palate. Sweet.
Overall - another really good barrel-aged beer.

Bottled 10/26/15. This is quite an old bottle and has been sitting on a shelf so already my expectations are not huge.

Pours thick and oily. Very dark brown almost black coloring. Minimal head. Not even worth measuring. Fades to a ring quickly.

Smell is a shadow of what this probably once was. Despite its age, this smells pleasant. Malt, some mild barrel notes, which is mainly bourbon, the sweetness from the barleywine creeps through. These are very weak though. Spin the glass to agitate as much scent as possible.

Taste is much more complex but still on the weak side. Malt is the dominant profile, no surprise there. Barrel notes, coffee, chocolate, reminiscent of pudding, cinnamon, mild honey, savory nuttiness perhaps from the bourbon and barleywine. A lot of nice flavors but all very weak and fades back into malt very quickly.

Full bodied with a light/medium amount of carbonation to cut through the density.

Overall...this beer is old. Plain and simple. If this was cellared properly, perhaps it could've survived and turned out to be more. But sitting on a shelf for almost 4 years has not done it any favors and still has a nice mix of flavors despite that fact. A shame that this one is retired. I would've liked to have tried it in its prime.

2015 vintage tasted in a Rastal Teku from a 22 fl oz bottle on January 31, 2019. Blend of imperial stout and barleywine ale aged in bourbon and scotch barrels. Complex blend of flavors.

3 year old, properly cellared bottle. Poured into a Fremont small snifter. Pours a very dark mahogany brown, appearing opaque black in the glass with a thin brown head that dissipates to patches with light lacing. Aroma of dark toasted malt, bourbon, chocolate, light coffee, dried plums and dates. Flavor is dark toasted malt, milk chocolate, bourbon, peaty smoke, dried plums and raisins, vanilla. A little fruit tartness and increasing astringent woodiness in the finish; a bit of oxidation. Medium bodied with light creaminess. A bit of a mess, really. Both the stout dark toasted malt and the barleywine dark fruit components are here, leaning towards the stout. The flavors seem to have mellowed and perhaps turned less deep, with the fruit notes getting a little tarter. The peat smoke is indistinct at this point, and adds to the wood flavors in the finish. This sounded so perfect, a blend of my two favorite styles, that I possibly aged it a little too long. I wish I had tasted this right away to see the changes. The basic blend is quite flavorful, but the finish is a little astringent at this point. Interesting.

A - Pours a very dark brown with a one finger tan head. Nice amount of soapy lacing.

S - Aroma is dark chocolate, roastd malts and dark fruits.

T - The taste bounces between imperial stout and barleywine. Dark chocolate, coffee, dark fruits, toffee, coconut and roasted malts. The finish has a nice smokiness from the scotch barrels.

M - Medium bodied with medium carbonation. Syrupy mouthfeel with soft dry finish.

O - This is a crazy beer. The mix of imperial Stout and Barleywine play well off each other creating some rich and complex flavors. Awesome beer.

Appearance: Deep reddish amber body, verging on black, crowned by a small, but persistent tan head, with elegant lacing that rings the glass walls. The form is that of a coarse Belgian lace.

Aroma: Sweet vinous alcohol dominates the aroma, Bourbon and wood notes are notably prominent, as well as licorice, bourbon soaked raisins, bitter cocoa, cold coffee, vanilla, and toasted malt.

Taste: Opens with a furious surge of bourbon and wood, the oak (?) notes being particularly prominent.
As the taste progresses, the bourbon and wood intensify. Cold coffee and licorice dominate the latter part of the taste, though the wood and bourbon remain omnipresent. Finishes with a lingering note of bourbon, wood, and spicy alcohol,


Mouth feel: Very soft and full, with the slightest hint of carbonation.

Drinkability/notes: A spectacularly excellent example, it seems perfect on a day when the weather is stormy, dark, and cool. Its a shame that is this a "one-shot", it should be an annual offering.

Presentation: Packaged in a twenty-two ounce brown glass bottle, with a pry-off crown, served in a New Belgium Brewing chalice.
