750 ml bottle into tulip glass, bottled in early 2013. Pours fairly crystal clear dark reddish brown color with a 1-2 finger fairly dense light khaki head with good retention, that reduces to a small cap that lingers. Light spotty lacing clings on the glass, with a moderate amount of streaming carbonation. Aromas of big raisin, prune, fig, date, apple, white grape, caramel, toffee, toast, brown sugar, light chocolate, wine tannin, vanilla, oak, light pepper, and yeast earthiness. Damn nice aromas with great complexity and balance of fruity/earthy yeast, dark malt, and wine barrel notes; with great strength. Taste of big raisin, prune, fig, date, apple, white grape, caramel, toffee, toast, brown sugar, light chocolate, wine tannin, vanilla, oak, light pepper, and yeast earthiness. Light-moderate yeast/oak spiciness on the finish; with lingering notes of raisin, prune, fig, date, apple, white grape, caramel, toffee, toast, brown sugar, light chocolate, wine tannin, vanilla, oak, and yeast earthiness on the finish for a while. Incredible complexity and robustness of fruity/earthy yeast, dark malt, and wine barrel flavors; with a great malt/yeast/barrel balance and zero cloying flavors after the finish. Medium-high carbonation and medium-full bodied; with a very smooth, fairly crisp, and lightly creamy/slick mouthfeel that is nice. Alcohol is very well hidden with only a light warmth lingering after the finish. Overall this is an awesome barrel aged Belgian strong dark ale. All around great complexity, robustness, and balance of fruity/earthy yeast, dark malt, and wine barrel flavors; and very smooth to sip on for the big ABV. A highly enjoyable offering.

Poured from the bottle into a tulip glass. Nice simple pop with a little bit of massaging cork, with some white gas slowly exiting on the pull. No this is not the #8 but it says on the bottle distinctl Sauternes Brew No 3.
Deep mahogany brown color, with an almost black appearance from a distance. Great foamy and shampoo like head on the pour, three fingers deep and even pinhead sized bubbles throughout. The body color is filled with the sides of cascading colored bubbles always populating the head and keeping it present. Real impressive looking beer.
Bouquet does not remind me of Sauternes at all. Lots of powdery cocoa powdered chocolate with a nice sweetness. Hiding small clove like brown spicy qualities.
Palate is surprising mostly on the crazy finish. Chocolate angle and powdered cocoa show up nicely if under a milky but thin body. There's some playful tonic water like carbonation but it doesn't distract from the palate. Finish at first sip is an incredibly slow lingering bitterness that grows exponentially very slowly that it overwhelms. Surprisingly repeat sips do not bring this back. Some fruit red dark character comes out a bit, matching with the cocoa.
Overall though this doesn't taste or remind me anything of Sauternes, but it's interesting but nothing I am crazy about going back for.
