The traditional sour beer uses the wild yeast found around the farm. This gives the beer a soft, refreshing sour taste. After a year of aging on a barrel this beer is ready for consumption. Each batch of Zure van Tildonk is carefully aged in our cellars at the Engelburcht Monastery for several months prior to release.

Pale yellow bottle pour has no visible carbonation. Aroma is is limes and Brett. The flavor is mildly tart with grape and oak notes. This is a quite palatable unblended lambic. The mouthfeel is very wet for the style.

12.7oz cork and caged bottle, poured into 10oz goblet. Poured a lightly cloudy gold color with just a thin cap of white head that instantly dissipated and left zero lacing.

The aroma was fairly benign, just some light grain in the base, and a tart component. On the tongue though, more of a floral taste appeared alongside the grain, and the tartness was amped up to where it was just shy of sour. There was a slight fruit taste (grapes?) in there too.

The body was on the light side medium, but better than thin. Drinkability was good, the bottle was gone quickly. Overall, a nice little brew. Probably worth a shot if you see it, but not worth seeking out, unless you're a huge fan of the style.

375mL corked and caged bottle poured into a tulip
(A)- Pours a bright golden honey colored orange. Some decent white froth that dissipated quickly
(S)- Large levels of barnyard hay funk meets some musty Brett. Very light lemon rind acidity
(T)- Bright but light lemon-like acidity meets lots of Brett barnyard hay funk. Some subtle biscuit and cereal notes on the finish
(M)- Good carbonation level and balance. LIght, but flavorful; lightly tart and refreshingly crisp
(O)- Not overly complex, but definitely enjoyable for a straight unblended lambic
