Certainly not adverse at leaning toward the bold, the characterful, the challenge or the difficult, the brewery of Hof Ten Dormal put on their Zenne hats and get to work naturally fermenting a lambic-like beer with the guise of raspberries for added complexity, shape and authenticity.

Hazy garnet and maroon, the beer settles into the glass with a hazy red wine appearance. Its slight peachy froth precedes a spicy, sour, fruity and earthy scent that's remiss of extended age bordeaux wine, a kiss of sea air and chambord liquor. A light and candied fruit flavor hits the tongue like a dry taffy, delicate pastry crust and sourdough.

As the flavors quickly roll along the middle palate, the sweetness is quickly cast aside and the splash of sourness becomes intense. Dry cider, red wine, red berries and citrus spice frame a mulled wine flavor but with a highly acidic palate with a piquant peppery spice that hits the back of the throat with weathered woods, leather, wine tannins and an overall mossy type of earthiness.

Lightly bittered and with a dry texture, the light bodied beer seems more rounded early but dries on the palate like the darkest and most tannin rich merlot. A medium short aftertaste of burlap, macerated raspberries and vinous tartness echoes boldly in a fast fleeting finish.

Moderate pour yields a one inch light pink head over a reddish-brown body with scant lacing. Nose of beaucoup raspberry. Taste of very beaucoup raspberry. If you like raspberry, this beer's for you. I like raspberry. Good feel and overall, a great little raspberry sour and will definitely recommend and have another one real soon.

the fruited ones from these guys have been just awesome, and this raspberry edition is no exception, just really special beer, a cool expression of the fruit, and something quite mature and interesting from a yeast standpoint. a deeper purple reddish color to it, a light and airy white head, and some clarity until the bottom inch or so of the bottle. smells awesome, a funky wild saison type base, almost a lambic funk to it, really complex and interesting, what i have come to expect from these guys certainly, but this is unique and funky beer even without all the fruit. notes of red wine to it, some tartness and tannins, lots of fresh raspberry too, but also a concentrated thing to it, almost cooked down and concentrated, not as sweet as some of these get, but real natural tasting and nice with the brettiness. this is impressive beer, lively feeling, tart enough, drinkable, and exceedingly interesting on the yeast side. i love this brewery and am glad to see a few more of their bottles showing up around colorado! this was top notch.
