Old school meets new school in this fresh approach to the classic IPA. At 50 IBU’s and 6.7% ABV, Breaking Bud features the restrained bitterness and alcohol of a classic IPA with newer tropical fruit hop flavors and aromas of Mosaic. Also in the hop mix are Simcoe and CTZ, creating layers of mango, passion fruit, pine and dank. A malt bill with a pinch of crystal malt and a hefty dose of flaked wheat keeps the beer crisp while adding flavor complexity.

Pours a clear golden color with a one finger white head. Smell has citrus, grapfruit pine and sweet malts . Taste follows the nose fruity hops of citrus followed by pine resin and baked bread malts . A fruity and bitter mouth feel a classic WC IPA

Knee Deep Brewing Co. "Breaking Bud"
16 fl. oz. can coded "7/12/2022" and sampled on 12/27/22
$3.99 @ Wall to Wall Wine and Spirits, Omaha, NE
Notes via stream of consciousness: This is a West Coast IPA brewed with 2-row, German wheat, English crystal and Mosaic, Simcoe, and Columbus hops. It's poured a clear deep golden body beneath a thumb's width of rocky off-white foam. The aroma is bright with pine, resins, and citrusy & otherwise tropical fruits (apricot, passionfruit, orange, grapefruit). The flavor delivers everything promised by the aroma and more. I'm getting notes of orange, mango, grapefruit, flowers, pine, resins, berries, earthiness, and some light peppery spiciness. That probably makes it sound more complex than it is although those notes are all there. It's fruity and sweetish at the outset but the bitterness (50 IBUs) steps in mid-palate leading it to a dry, earthy, spicy, and grassy/herbal finish that lingers. In the mouth it's medium bodied and lightly crisp. The head held up well but not great, although I do still have an almost completely solid surface covering at the moment. The lacing has left what looks like alostratus clouds dropping rain in the distance. This is a solid West Coast IPA that deserves its notoriety.

Staying true to their West Coast roots, Knee Deep brewing is knee deep in hops as their IPA celebrates the old world hops of Columbus and Simcoe with the newer Mosaic variety for a dry and dank session promised.
Pale gold and cast in a medium hoppy haze, Breaking Bud breaks out with a strong fruity and herbal perfume that rolls effortlessly off of its bright white foam. Citrus, tropical and herbal aromas carry and hemp-like scent with potpourri and pot. Scant sweetness greets the palate with a light wafer, bready and honeysuckle sweetness that's brief on the early palate.
By the time the ale washes the middle palate, the sweetness is already retracting and the hops are building. Sharper flavors of pink grapefruit, orang and lime peels create a racy and tangy flavor while a more tropical taste of passionfruit, mango and papaya bring a more succulent and juicy counterpart. A rapid dryness allows for a bold bitterness to emerge with flavors of pine, peppery grasses, hemp and fruit peels.
Medium bodied and trending dry, the beer offers a crisp, clean and highly refreshing session that closes sharply with a long and resinous aftertaste. Its a hop lover's dream beer that has bold flavors, a smoothly bitter finish and a highly drinkable mouthfeel.

OMG this is one GREAT West Coast Style IPA. The hop characters shine in this beer as does the bitterness, but then the dry finish takes it all away. Superbly done!

Look: Nearly clear burnt orange with a lofty, pillowy head that refuses to dissipate, eventually relenting and slowly settling to reveal copious lacing left behind
Aroma: Grapefruit, orange, blueberries, Cannabis, pine, light tropical fruit notes, fir needles, strawberries, and bready malt
Taste: Starts out with a punch of sappy pine and grapefruit rind that hit hard and are followed by fir, mixed berries, and dank. Malt supports the barrage of hops as they battle for position until citrus, pine, and dank regain their lead for the close
Mouthfeel: Full, medium-high carbonation, and noticeable, medium-strength dryness on the finish
Overall: I forgot just how much I love this beer. It’s a very tasty and well-made WCIPA that probably was one of the, if not the first ‘dank’ IPA before that sub-style was noted as such. Personally, the hop mix is right up my alley along with the bite and dryness I expect and love. Too bad they finally had to lose the obviously referenced can artwork paying homage to a great show but glad what’s in the can remains the same ol’ beer. Recommended

Ok.... It's a decent IPA... But I'm looking at other reviews (which one should never do before writing one's own) and I'm just not feeling it..... Above average, yes..... Outstanding or special? Nah

Now were talking.. Favorite beer so far from Knee Deep Brewing. I poured from a 16 ounce can into my Speigelau IPA glass and got a beautiful carbonated 2 finger head which didn't surprise me because of the 1 1/2 month old date..Very fresh and tasty.
The color presented a perfect golden copper with bursts of papaya, grapefruit, and a slight tropical salad notes..
The smell was bursting with sharp dank hops, and was skunky yet pleasant with its earthy hop appeal..I'll definitely buy this one again and its definitely affordable I must say..Cheers.

bottled 06/10/2020 (grr). 22 oz for $9 (grr). at least it put a date. poured into a 16 oz mason jar.
look: Gold3n amber, clear. 3 inch, yellow white, medium bubble head (which becomes fine and billowy) lingers. intricate lacing.
smell: piney hops and malt. some citrus.
taste: The hoppy bitterness is immediately entwined with the malt. biscuit breads, and piney hops. hops linger beautifully.
feel: medium low carbonation, medium to full mouth feel.
overall: outstanding beer. whatever your style, this is dang great beer! I was skeptical about the name, even wondering if it had hemp. then it was bottled almost 8 months ago. I thought I would be disappointed somehow, but this is really a fine beer
