Notes / Commercial Description:
Old school meets new school in this fresh approach to the classic IPA. At 50 IBU’s and 6.7% ABV, Breaking Bud features the restrained bitterness and alcohol of a classic IPA with newer tropical fruit hop flavors and aromas of Mosaic. Also in the hop mix are Simcoe and CTZ, creating layers of mango, passion fruit, pine and dank. A malt bill with a pinch of crystal malt and a hefty dose of flaked wheat keeps the beer crisp while adding flavor complexity.

Poured into a 12 oz tulip glass bottled on 8/15/16. Pours a very bright yellow with a fluffy 3 finger sticky white head that that leaves behind gobs of lace.

Smell is pine, marijuana, tangerine, peppery hops, and grapefruit.

Taste follows tropical upfront with hints of gonja, leads to peppery hops, pine, and a hit of grapefruit in the very well balanced finish.

Mouthfeel is maybe medium, loads of life, a little dry, and excellent drinkability.

Overall this is really nice, despite the hefty price $8.99 for the bomber, that being said a very tasty and well crafted beer.

Wow...just WOW. Popped the cap and my boner grew. Dank as Phuck. Lighter fruits and pine / marijuana.

Once poured into a glass, Mango and melon apparent but mellow. Trying to shine but subdued with the piney & "herbal" thing overshadowing. Also, there are Wet Cardboard-ish notes lingering...

This beer reminds me of the off batches of Pliny I've encountered here and there that weren't as "bright" as they should have been with a wet cardboard type flavor lingering around.

After Lupilun River, this wasn't a disappointment but being only 20 days old in the bottle, I expected a little more. HOWEVER, I will say this. The body and mouthfeel is as clean as any world class IPA Ive ever had. Clean, clean beer. Worth the purchase on that alone. As if Vinnie gave the secret code away...

Appearance - Pours crystal clear and pure golden in color with an off-white, finger width head. Good retention, resulting in a thin, consistent layer on top of the surface. Nice lacing, with a big sheet covering most the glass and streaks breaking off from it.

Smell - Aroma hits on notes of orange, lesser pineapple and mango, and a bit of peppery spice and pine. Bready undertone.

Taste - Follows the nose. Orange is the predominant flavor with a touch of pineapple zing and a peppery spice bite. Light pine dank. Malts follow beneath, but hit on bready sweetness and a bit of caramel. Finishes smooth, with light pith bitterness ringing gently in the aftertaste.

Mouthfeel - Medium-bodied with moderate carbonation. Slick texture, then a mostly dry finish.

Overall - A smooth, tasty IPA from Knee Deep that just misses being a truly great one; my only gripe being strength of flavor. If it was just a tad more punchy it'd be World Class, IMO. That said, it's pretty fantastic, and I wouldn't hesitate to buy this again.

Beautiful transparent golden brew, topped by a creamy white head. Decent retention and lacing.

Crispy green hop aroma: pine, a touch of grapefruit and pineapple, herbal notes. Smells like a fresh hop beer, actually.

The traits of Mosaic don't show too strongly; it seems complementary in this case to Centennial.

The palate backs that up. There's some fruit, building as you go - pineapple and papaya, a touch of mandarin orange. More dominant however are resinous, green sappy tones.

Despite the name (and hop bill), it isn't overly dank, leaning away from sickly sweetness and toward vegetal piney flavors.

Excellent bite of bitterness keeps it crisp and balanced. The malt shows little sign here: a touch of brown sugar caramel, and a touch of pale biscuit.

Crisp and lively.

This is a fantastic, flavor-packed single IPA. In every aspect save mouthfeel, it could pass for a DIPA.

looks - skankin', body a little misty, like morning, with light amber bud hairs and head like clouds over rainbow country
smells - like the spray from distant marijuana waterfalls wofting across a meadow
taste - like mandarin oranges at first, but thankfully that gets balanced away by dry creams and bitters
feels - creamy cool and milky, like a surfer dude's skin
overall - my new best friend

Picked up a handful of beers from these guys, both because they looked good, and because of the great names or references as well. I hope this lives up to it. It does have a very large amount of empty space in the neck which makes me very worried!!! Bottled 6/09/15 so at least it's not too old.

Pours a nice creamy fluffy bubbled 1 finger head that fades at a slower pace, nice soapy lacing, surprisingly crystal clear slight chill hazed honey golden color.

Nose is awesome, some dank resinous hops, musty notes, lots of tropical fruits, passion fruit, guava, a little candied mango, a touch of tangerine and citrus, some candied orange peel, dank resinous hops increase and musty notes, with some sweet candy malt in the background. Then the hops turn to a little salty briny like hop notes, mild hop oils and pine, barley poking through.

Taste brings nice blend of hops and malts again, fruity bubblegum out front, generic fruity flavors, with some tangerine and stone fruit, into mild soft tropical notes, passion fruit, a little mango notes, candied orange zest notes, touch of zest. Mild sweet candy like malts, candied orange zest, sweet malt almost like a DIPA. Then hops turn spicy on the back end, a little briny, earthy with hint of pine sap in the background. Finish is drier thankfully as it was a bit sweeter in the front, spicy earthy hops dominate the finish, a touch of fruity notes, with more candied malt flavors.

Mouth is med bod, decent but a touch on the light side of carb, bit sweet initially.

Overall not bad, the hops are very interesting, dancing between great hops and so-so. I wish the dank resin and tropical notes came through more on the taste as they did on the nose, and less of the earthy spicy hops, and the malts were a lot less overall. Between the overall high bitterness and sweet malty flavors this seemed more like a DIPA than a regular IPA. Still enjoyable though.

Pours into an imperial nonic a pale lighter golden with a sticky tightly formed half finger bone white head atop.Tropical fruits really stand out in the nose with a bit of dankness,almost like being in a summer vegetable garden.A dryer palate with tropical fruits at the onset then melding into that veggie garden and dankness in the finish,even a hint of white pepper I'am picking up in the late finish.This is an interesting beer,the hop profile is nice but it doesn't really hit home.

A hazy orange color with a small tan head. A fair amount of lace.
Citrus, pine, and sweet fruit aroma. Some caramel.
The taste followed the nose. Grapefruit, pine, melon. Caramel.
Medium-bodied, on the crisp side.

The smell is fantastic. Very fresh. But all the aromas don't come out in the flavor. The after taste has a bit more flavor. Not as hoppy as expected.

16 oz can, dated 10/10/18. Pours clear orange gold with a big fluffy white head that retains well and laces the glass.

The aroma is sweet bready malt with lots of very dank and resiny hops.

The flavor is sweet bready malt with lots of dank resiny hops and a little fruit. The mouthfeel is medium to full bodied with smooth carbonation.

Overall, malty, dank and resiny IPA.

Taste is meadow, wet hops, light citrus--tangerine and orange, and a good dose of toasted malt. Above average for the style and it keeps me interested in the brewery, but I do not believe I would rush out to get this one again.

On tap at Moo Creamery. Served in a pint glass. Nice floral aroma. Best balanced Knee Deep beer I've had. Crystal clear gold color with a white head. Very easy drinking for the ABV.

This is my idea of a session IPA. Great flavor, floral rather than piney but slightly bitter on the finish. Light colored, deceptively so for such a tasty IPA. As for smell, on a scale of dank to perfume, this is close to a dank perfume. I really like this one. Glad to see it in Texas finally.
