On tap at Gaslight.

LOOK: ginger ale, active carbonation
AROMA: light undiscernable fruit, grass,

TASTE: pine, light citrus.

Feel: light bodied. A touch of creamy. Doesn't feel as lively as it looks.

Alcohol is well masked.
Not bad, but a little too dank/bitter.

The beer pours a nice and thin white head that dissipates very quickly. The beer itself is a clear medium gold color with a slight amber tinge. It's a really nice beer to look at with that kind of metallic sheen to it. The smell and taste are similar in terms of notes and intensity. The hop notes are pretty good. The consist of a sharp, yet light, pine that cuts through the grapefruit notes perfectly. The booze note is slight and fruity, which helps it blend very well with the hop notes. The body is very good since it's scarily drinkable for the beer style. The beer definitely has a heavy body to it and a very light carbonation that it's barely noticeable and makes it very smooth to drink. Overall, it's a fantastic TIPA and worth every penny. Go for it.

Golden blonde body with a 2 finger white head.

Very orange and fresh nose. Some light onion.

Fresh with faint hits of caramel dipped moldy bread.

Refreshing and clean with hints of resin.

Overall, it's ok. Not a fan of the caramel, never am.

I've had Simtra many, many times, but this is the first time I've attempted to review it. That's partly because I've only just started reviewing, but also because it's notoriously hard to find fresh in L.A. Like Pliny, it really should be drunk within a month, its sweet spot being 2-3 weeks. This review is for a bottle just over three weeks old, about as good as it's going to get.

Dark-gold, verging on amber, it could be the poster child for the West Coast IPA style. Initial head is a finger thin and dissipates quickly--due to high ABV? Totally transparent. Smell is pungently dank, especially as it warms. Taste-wise, there's a light caramel when it first hits the tongue, along with a pithy bitterness. Booze is noticeable, but not off-putting, possibly a feature of drinking it relatively fresh. The malts stay in their place, always cowering under the bitter hops. Lots of reviews talk about it being "juicy," but I'd say it's nothing like the NE style of "juice" I normally think of. Maybe citrus, if you're talking orange rind/lemon zest. Mouthfeel is more lush than you might expect for the ABV, even Pliny-like, making the whole package extremely drinkable.

Overall, an excellent TIPA, if you can find it fresh. Too much older than a month and it becomes overly sweet and malty. This bottle was totally on point, however, a real gem.

The dank smell hits you right from the start. It's pungent and piney. Just what I look for in an IPA of this caliber. It's light copper in color. It tastes like a real triple IPA. It's strong, bitter, and makes you want more with each sip. Mouthfeel is a little thin but it's not off putting. Overall, I love this beer. I'd drink it everyday if I could. Well done, Knee Deep. Great beer.

From the growler, it pours a solid amber with a small head. Lots of citrus in the nose. The mouth, expecting bitter, gets a citrus wallop to go with the malt. Yum!

Small, 12oz snifter ($3.00) during Happy Hour today at The Nashua Garden...

It's a clear, medium golden brew with some scattered, indifferent carbo. Head is a creamy, fine layer of white foam, with solid stick on the glass. Has a strong, rindy citrus aroma which jumps right out at you. Body is medium to medium-plus, and it is rather smooth.

Taste has some lightly sweet toasty malt at tip-off. But beyond that it is citrus city. Has pineapple, grapefruit and a smidge of apricot mixing in a piney, resiny, pithy blend which lingers long and lovingly on the palate. This is solid and top-shelf; with a tiny bit more sweetness it would really kick ass. Zum Wohl!

Orange - straw color. Minimal but consistent head, low lacing.
Heavy hops in nose, impressive aroma.
Sweet, dank, resiny hops. Solid tasty malt backbone. Bitter, sweet, hoppy.
Good carbonation, good body, smooth, dangerously so for the 11+% range.

Dank and bitter is the theme. Clear yellow golden, white head. Aroma of pine resin and citrus fruit. Taste is a little boozy, and quite bitter. Hops hops hops. Sticky mouth feel.

Pours a nice, slightly cloudy amber. Minimal head and slight but even lacing. Aroma is absolutely delightful, a citrus/ dank hoppiness that's floral and crisp.

Taste is what a triple IPA might taste like. Astringent and dank, marijuana, juice, aggressive hops (Simcoe) balancing with the juicy citra (I think -- I'm no expert) that brings a scorched pine cone feeling to a glass of apricot. I feel the burn of alcohol without it tasting boozy. Unlike Hop-trio (Hoparillo), this one isn't all over the map. It's pinned itself deep and strong.

Bitter is listed as 131. Yes, that's about right. As it warms it gets a little juicier, or maybe I'm getting used to the bitterness. The oily resin begins to grate on me as I continue through the bomber. Not exactly a pleasant sipping beer. Bring a knife.

I was able to locate a bottle dated 10.14.16 at the local Costco, just 15 days old! Who am I kidding, I bought several of these bottles!

The fresher bottle has a cleaner taste with more crisp, distinct flavors and a sharper, more bitter finish. The lacing is also more pronounced on the fresher bottle and is truly a thing of beauty. This brew is great at three months old, it's exceptional at only a couple weeks old.
Poured from a 22oz bomber dated 07.05.16 (about 3.5 months old).

A - Bright orange, cloudy tangerine with decent head and beautiful lacing!

S - Hops galore! Tropical, peaches, tangerine.

T - Sweet hops with a mild malt backbone. Fruity notes, sticky smooth finish.

M - Medium/heavy mouthfeel that becomes more complex as it warms. Surprisingly smooth given the 11.25% ABV.

O - Amazingly complex, smooth and doesn't taste anywhere close to 11.25% ABV. Usually as high alcohol content beers warm, they become almost unpalpable and malty beyond enjoyment. This beer warms and actually becomes more enjoyable as the flavors really pop, all while maintaining the wonderful smoothness. Buy it, you won't be disappointed!

Impressive. Golden pour with small but lasting clingy white top. Aroma is juicy and piney - not much different from their dipa. Flavor is just so balanced. Great blast of hop bitter throughout, yet maintaining balance and smoothness until the finish. This is truly dangerously drinkable stuff. Delicious.

A pretty deep amber color with a scent of pine, grapefruit, and cut grass and an earthy hoppy resin taste that lingers. This release from Knee-Deep is a crowning achievement for an upper-NorCal area containing lackluster breweries (especially the Tahoe area which is filled with shitty people working at shitty breweries that only capitalize on know-nothing tourists who probably could be served piss and think it's good beer). But for sure, this quality brewery establishes itself as a leader in its hometown with a quaint setting that positions its beer at the center. If I'm ever nearby I enjoy visiting its headquarters and downing a growler or two before challenging wannabe Portland-hipsters to cornhole and impressing their girlfriends who are not familar with what a real man looks like. I force others to fill up my growler, at this point the establishment has refused to serve me, but I am King when I am here. My shirt's off, my pants are down, and I'm dancing on picnic benches yodeling (not exactly sure why) the top five billboard hits at the time. They try to stop me but peasants have no command over a King. I usually end the day by finding the vat full of newly-completed Simtra and dive right in. It is alwasy fresh, still warm, hot even, and the burns serve as merely more mouths to drink this beer into.

Another great beer from California, leave your keys on the key rack because after a couple of these you'll need a DD, yeah it's that good you'll want a second one if you're a hop head.

A really big dose of Citra and Simcoe results in a nice mix of bright tropical and citrus fruits which is counterbalanced by dank pine. It's a nice mix and both are quite potent. The malt is pretty muted, particularly considering the ABV. it is there, but the hops are the focus. Alcohol is unsurprisingly notable, but for an 11.25% beer it goes down frighteningly easily. Good stuff.

A beer I have been wanting to try for years! Finally got the chance, super fresh too. For one thing, this doesn't drink like anything hear as strong as it is, so juicy and yummy too, definitely a bomber you could get yourself into trouble with. Clear golden in color, honey hued, not even all that much body under the tall white head. Pretty lacing too. Smells most righteously hoppy and west coast oily. I love the combination of the holder sim or with the more delicate and fruity Citra, it's a perfect match, and for me much preferable to the more common mosaic andcitra combination we are seeing everywhere these days. It needs thebitterbite if the simcoe for balance, and the zesty grapefruit notes is provides. They seem equally proportioned in the flavor, more simcoe up front more Citra in the back. A beautiful duet. Lots of resinous quality to this, some heft to the malt base but this isn't heavy, and a bit of the hop oily sweetness you often find in the stronger IPA types. Huge fan of this one, it opens up a lot as it warms, and it's way too easy drinking for what it is. Definitely worth the hype and famous for a reason! One of the best in it's class!

edit: drink fresh! yikes, this really falls off a cliff when its older...

A: Pours a golden color with 2 fingers of head that fades down to a nice cap that leaves some sticky lacing

S: A good deal of citrus and pine up front, with hints of stone fruit and a touch of bready maltiness. Definitely picking up the IBUs in the nose as well

T: Follows the nose. Starts off with a burst of the citrus, pine, and stone fruit and slowly meanders into the sweet bready maltiness that does a nice job balancing flavors while still allowing the hops to fully shine. Bitterness starts strong and doesn't relinquish much, going well into the finish. Some light alcohol notes, but for the most part the alcohol is extremely well hidden under the pure bitterness and malt strength. Finishes with lingering bitterness, light alcohol, and pine

M: Medium bodied with moderate carbonation. In no way sticky or overly sweet

O: A great triple IPA that does an extremely good job balancing the malt, hops, and alcohol. Definitely still in IPA territory compared to BW or strong ale thanks to that factor. Definitely worth checking out if you're into stronger IPAs that maintain a powerful hop punch

pours a clear light gold with a thick head. much lighter than expected.

smell is clean and light,. sweet hops, light fruit.

taste is bitter yet clean. creamy feel and tons of bitterness. easy to drink for a beer of such a high abv.

pretty good beer but nothing crazy. very drinkable for a high abv but overall a good beer.

Poured aggressively into a 13 oz tulip glass bottled 8/13/16. Pours a very bright orange with a 2 plus sticky white head that leaves bountiful lace.

Smell is dank marijuana, pine, apricot, pine, tangerine, and pungent grapefruit.

Taste follows very aggressive marijuana, apricot, tangerine, and finishes with pin grapefruit that lingers after each sip.

Mouthfeel is massive, plenty of carbonation for a beer of this size, a little on the dry side, because it is sticky because of all the juicy oily hoppy goodness, and drinks pretty darn easy for being such a a beast.

Overall this is my favorite triple IPA to date and it may be the dankest beer I have ever had.

The pour is golden amber and bubbly leading up to a full white and foamy head.

This is a month old but I still get a good aroma of floral and herbal hop notes along with the basic toasted pale malt note under it all.

Medium or better body.

The taste flirts quickly with toasted sour dough but then the floral and spicy hop notes kick in. Mild finish. No booze for over 11%.

Copper and relatively filtered, lots of fast rising bubbles making the body look light. Topped with 4 fingers of yellow-brown, foamy head.

Pine resin, caramel and pineapple. Hints of cooked onions.

Wow. There's a fierce battle going on. The heat of the alcohol, pine resin, chili pepper, fried onions, caramel, and linen, all bombard the tongue.

Thick, alcohol burning, hop drying, lightly syrupy body are balanced with moderate, spicy carbonation.

Got in Santa Rosa at Whole Foods. Drank in Redding, California Sept 17th, 2016. A real push to the limits of a IIPA. A little alcohol burnt for me, and a little boozy. Flavours go well in it, but I wouldn't say this is outstanding beer.

From a 22oz bottle, dated 08/13/16, served in a tulip.

Pours a lightly carbonated, brilliant liquid gold with a generous crown of rocky foam. Retention is good, leaving a heavy ring of suds and webs of lacing.

Smell is bright and biscuity, pine, pineapple and peach, sweet and sappy.

Upfront the taste is pineapple soaked in whiskey, fresh-cut balsam and fresh straw. What with the amped-up abv, the flavours are carried in the sinuses as much as on the palate, principally sugar cookie, grand marnier and lots of pine. Finishes sweet and sappy with a tongue-coating tingle.

Feel is medium-to-medium-heavy, more oily than syrupy, dank and, despite it's appearance, brightly carbonated.

Overall, a kickass TIPA which makes me think of a beer version of triple sec. There's no attempt made at hiding the alcohol here but, regardless, you'd have to read the label to know that it's as high as it is. Or try to stand up or touch your nose or tie your shoes.

I'm stepping outside my NEIPA comfort zone in trying this one and I must say that I'm enjoying the bejeezus out of it.

Poured from bottle into glass. Descent head with little carbonation. Hops are evident to the nose - expect to be punched in the face! Modest hops on front with a full punch on the back side! Full bodied yet well balanced. A very nice beer.
