A tart, refreshing saison brewed with our dear friend Luc Bim Lafontaine, formerly of Dieu du Ciel! Lime, hibiscus and blood orange in a mixed fermentation.

Picked up a bunch of these up at Hill Farmstead. Poured into a Duvel tulip. *Note: This bottle, Batch 2, was a slow gusher, as in two seconds after popping I had to quickly pour to prevent it flowing out of the bottle*
A - Poured a nice crystal clear (which is amazing seeing how it gushed) super dark golden lightly copper hue with a one finger white head that fades down to a thin, thin blanket but really doesnt leave any lacing.
S - Aromas..my god. This is one of the best non barrel aged saison aromas I've smelled. This beer is second behind Ann as far as favorite HF saison aroma. Tart lime just explodes on the nose like the beer did from the bottle! Wonderfully bright lime flesh, juice, and zest. I do not get much hibiscus at all, however, the finish is nice lingering blood orange. Not just any blood orange, but Tarocco, the wonderful blood oranges I ate near Mt. Etna. Scattered throughout is a faint farmhouse aroma.
T - Taste is not quite as good as the nose but man alive is it good. Tons of bright, tart, delicious lime juice. Like I'm squeezing a lime into my mouth. There is much more farmhouse in the taste than the nose. Right after the lime there is good light hay, maybe some wheat, and then out comes the blood orange. Flashes of the peel and juice and then is just rounds out the tongue with more lime. The juicy sweet blood orange and the tart lime bounce off each other with the rather faint hibiscus does help round things out and offer a break in the citrus.
M - Mouthfeel is very nice. Carbonation is bright and clean, much more than I was expecting after that slow steady gush.
O - Overall, I loved this saison. Alot. Favorite non barrel done saison from Shaun. Hands down. Just wish the appearance was better. Is this a typical saison? Not even close..but again, it is just delicious. Very Unique and very well crafted.

A - Orange body, slightly hazy, with a thin white head, tracing the sides with mild lacing. Second pour is understandably much more hazy, turning transparency to translucent.
S - A slightly spiky tang of acidity and fruit notes. Hints of funk below, mostly horse blanket and earth.
T - Brisk and dry. A year has done nothing wrong here, but it has dropped some of the fruit notes out. The remaining hits are mostly in the lime, any blood orange is dialed back. The close is mildly biting, but nothing is punishing. The end hints at sweet tarts, and orange oils. Subtle and strong, this is nuanced sour.
M - Everything is measured without being soft. Bright and slightly puckering, but light enough to not tax.
O - A fine sour saison, very tasty and with a lot to explore. The lime is front and center, but there are all kinds of citrus highlights, and lots of nice but not overpowering acidity.

The nose is full of tart lemon zest, accompanied by white bread, funky cheese and leather, building the beers foundation. Its fruit impression gets enhanced by sour blood orange rind and wet mushrooms. All in all the aromas feature an intriguing balance between tart fruits and pleasant funk, coming well together, with notes of old potatoes, forest flowers and saw dust.
Has an incredibly smooth mouthfeel to it, while the carbonation remains unusual high, which leads to an outstandingly pleasant drinking experience, finishing with soft mineralic qualities.
Tastes of matured hops, hay, lemon rind and dough bread, while its fantastic mouthfeel and clean design reveals a plethora of nuances, encouraging me to keep on drinking. The beers refreshing qualities reveal themselves, as luscious, funk coated blood orange gets introduced. It packs a rich fruitiness, as well as a bitter punch, successfully balanced by hay and crackers. Its aqueous, mineralic quality gets the most noteable during the finish, due to a fusion of lively carbonation, blood orange and lime, creating a sappy, bitter, pleasantly funky finish, with a hint of fructose to it, adding even more depth to the bitterness.
While this is certainly funky and tart, fruits are the mvp in this beer. The main difference to the popular fruit juice ipas is, that this beer is not entirely based on the fruits. It entangles them into recognizable barnyard qualities, which all benefit from the beers fantastic balance, opening the palate to many details, which becomes the beers biggest strengh overall. Very unique in taste, successfull on all fronts, while remaining its focussed freshness, this one is a winner.
