The summer of 2019 marked our first collaboration with the barrel-aging legends at Central Waters Brewing Company. In true collaborative spirit, we combined elements unique to each of us, including the opportunity to source bourbon barrels that held B&E’s Trees maple syrup for 15 months. We knew a collaboration project of this magnitude called for it to be brewed at both facilities. For us, the road to Amherst; for them, the road to Decorah. An overnight boil, no adjuncts, and unique casks were the guiding triumvirate for this project. Over two years later and the road fully forged, we invite you to join in the celebration and culmination of this collaboration.

2021 bottling; consumed on 6/26/2023

Pours a dense, inky black body topped with a finger of tautly soapy, pale mocha-hued foam; decent head retention leaves a blank surface, larger, fluffy collar, and minimal-no lacing holding to the walls of the glass.

Aromas of char and dark fruits upfront wash over building maple underpinnings; dark chocolate peaks as maple toffee evolves, with residual vanilla bean and barrel tannins effectively rounding out the bouquet.

Taste opens to maple hard candy and rich bourbon vanillins, with a residual oaky char crossing milk chocolate interludes as notes of caramel and dark fruit linger.

Mouthfeel shows a body on the lighter end of medium, sporting textures of taut, charry silk and distant wisps of bitterness dispersed via a mild carbonation; creamy, slightly chewy back end progresses an overall density expanding deftly through the back end of the palate.

Extensive cohesion yields a seamless flow of barrel-charred bittersweetness capitalizing on a well-attenuated maple engagement; a brilliant exercise in both sweetness and subtlety.

Thanks to the lovely wisconsinbeer1 for handing me this 22 oz. bottle in an abandoned parking lot late at night. The bottle has gorgeous dark blue wax, for what it’s worth.

The pour is black with a head slimmer than a cocked-up supermodel. The nose is a festival of malts, plus undercurrents of maple, smoke, with barrel rushing.

Toppling Waters – Toppling Goliath rattles windows. It’s thicker than the best bacon I’ve ever tasted. Maltier than field of malt. Sweeter than the Purest Kiss. But what I want to say is this beer is phenomenal. Not quite the CW version, but the barrels, the maple-based sweetness, the body combine to make a unique experience. I could drink plenty of this.

Superb. Full stop. Collabs often tend towards watering down the skills of both breweries. This is one of the best ever

Thickly glossy black with a short but densely creamy dark tan head that retains fairly well and fluffy.

The viscous yet medium body delivers hickory and char up front, then cacao and campfire marshmallow in the chewy dry finish that exhales Raisinets. Vanilla threads emerge more and more as I sit with it.

While initially surprised, after a few more sips I easily confirmed that I enjoyed this more than the Central Waters version, which I had a full, contemplative pour of on draft the day before Great Taste of the Midwest last year.

On tap at the Brass Tap, Cedar Falls. IA, served in a small snifter. Pours the color of motor oil, an opaque deep brownish black with only a sliver of light piercing the edges of the surface. A wisp of tan head settles rapidly, leaving scant lacing. It amazes me sometimes how the brewer can coax a ton of complexity out of the most basic of ingredients. This smacks you in the face with aromas and flavors of molasses and bourbon / barrel up front, followed by notes of chocolate, black cherry, licorice, coffee, and hints of vanilla and maple syrup. Thick, syrupy mouthfeel, very sweet. Surprisingly little alcohol warmth despite the high ABV. Overall, not much to complain about here. Highly recommended.

Look - Black thick syrup with great rimming
Smell -chocolate caramel and barrel
Taste -just fantastic lots of barrel chocolate caramel slight maple
Feel -full body creamy light carb
Overall - really great non adjunct ba stout
