Notes / Commercial Description:
In his most notable mosaic work, Sosus of Pergamon depicts doves sunning atop a golden chalice. The image was said to be so enticing that real birds flew into it while trying to reach their stone companions. This single-hop showcase is inspired by the beauty of divinity of the Sosus mosaics. Just as the doves discovered their golden nectar, discover the irresistible nature of the Mosaic hop.

Poured from 22 oz bottle from the fridge into my Duvel tulip. Though I have packed up all of my plates, dishes, and cups for my upcoming move, I still have eight tulips in my cupboards to choose from. Priorities.

A: Pours a really nice golden orange color with a finger's worth of white head that fades gradually to a soapy halo along the sides of the glass with even fewer remnants as a film. With the higher ABV, the lack of head retention isn't a surprise.

S: Hit with mango and pineapple right up front. A hint of weed mixed in there that asserts itself even more after I picked up on it. The more I smell it, the more dank it seems.

T: A lot of those tropical fruits I was picking up in the nose are making their presence known on the palate. A ton of the same mango and pineapple juiciness. Wow.

M: For a beer with this ABV, this drinks like a much lighter brew. The carbonation is spot-on and there is no drying effect like the one I get from other more bitter IPAs. Very well done.

O: Though I have only had three Toppling Goliath beers, it isn't a stretch of the imagination to think that these guys could be the next big thing. Having been spoiled with both San Diego and Vermont beers based on my connections to both coasts, this could be a great substitute for the guys in the middle.

22oz Bomber
$11.99
Binny's - Montgomery, IL

Sosus is a mildly hazy gold libation with some apricot orange highlights running throughout the body. It glows when backlit and carbonation can be seen rushing to the surface in streams. The foam forms easily. It grows to a couple fingers in height on an easy pour, eventually falling to a sturdy cap while lacing the glass up something crazy. It's a good looking IPA.

Wowee, wow, wow. Giant blueberry off the bat quickly segues into rich, lush tropical fruits. Mango, starfruit and papaya show themselves the most but this is a veritable tropical fruit salad. The herbal type Mosaic dankness pops in on the backend but this is mostly tropical. The malt base is sugar cookie forward with a touch of white bread and a clean booziness.

The flavor is much the same as the nose and I won't complain for a second about that. Blueberry, again, gets it started before being overtaken by that giant tropical fruitiness. Lush mango and starfruit steal the show in that regard while the others add depth and brightness. The Mosaic dankness runs the periphery, gently hugging the beer as a whole. This is all over a pale malt base that really allows the hop profile to shine.

The body sits a hair or two over moderate in weight. While that weight is there it's also very plush and luxurious, almost pillowy. The bubbles are soft yet keep the beer moving. It's highly drinkable without the least hint of alcohol. Bitterness grows on each drink to moderate and the finish is nicely dry. This is something dangerous.

Mosaic, it's almost like cheating. Sosus is big and bright and bold. I can't begin to imagine how many hops per barrel gets used in the making of this fine product. It's one of the best expressions of Mosaic that I have found on the market. Go get you some.

Did not live up to hype. I love mosaic and this didn't give me much of it. Generally a disappointment...and was high on my "wants" list.

Appearance: A gorgeous straw bail color with a finger of white head and nice lacing.
Smell: An instant reminder of my favorite beer of the year by Indeed Brewing: LET IT RIDE. A mosaic hop beer where they use four pounds per barrel. It's the perfect balance between citrus, a slight tropical sweetness, and a clean finish with some classic midwest dankness. Juicy, but not as much as King Sue, which really makes it even more amazing. One of my favorite DIPA'S alongside let it ride, scream, king sue, sucks.

Great beer. Clear golden brew with nice lacing. The smell is full of citrus fruit. The mosaic hop is amazing. Incredibly easy to drink with not much bitterness. Thanks to @ECOBOOSTINST for the trade. This is one of my top ipas.

2/2/17 New review.

Upon my second bottle of this I upgraded my ratings. This is a stellar dipa.

This is definitely one of the best double IPAs I've ever had. I've never had Heady but I have to imagine this can compete.

A - perfect hazy orange
S - tropical bright kind of mango pineappleish
T - follows the nose. Very smooth.
M - perfect - DNase enough but still so drinkable
O- close to a 5 - everything I want from a double IPA. I believe this beer features the Mosaic hop which, to me is very similar in profile to the Citra. It does a great job showcasing it. I dream of making beer like this.

Nice frothy two finger high head with a dimpled surface of an eggshell white hue, retention is above average as any larger bubbles settle into the mass, the lacing is extremely thick and looks glued to the glass sides, almost no movement. Shiny yellow gold to orange rust colored liquid, no real visible haze, coated wall-to-wall in a sheet of fast rising bubbles. Pretzel dough, salt and freshly mown grass infuse the nose first, sour white grapefruit accents frame the pineapple, papaya, nectarine fruit scents, on the whole has a dry texture which stymies its lift, pine cone, decomposing forest floor matter provide dankness before it all cascades away. Full-bodied, on the heavy side and super creamy, enough so that it counterbalances the biting hoppiness. The carbonation diffuses the flavors some. More concentration and sweetness here in the pineapple, mango, peach fruit, buttressed by the buttered biscuit element. Much more zesty bite in the orange to white grapefruit citrus than juice. Loses a good bit of the dankness here, cleaner grassiness. Has a tight weave to it which might benefit from relaxing and letting it all flow more.

From 05/21/14 notes. Big thanks to BeerLawyer85 for sharing this one; thanks Ross! First Toppling Goliath beer, poured into a globe glass.

a - Pours a hazy golden orange color with one finger of fluffy off white head and moderate carbonation evident. Looks good.

s - Smells of citra hops, oranges, citrus, tropical fruits, honey, pine hops, and mangos. Awesome nose, super fruity and hoppy. I love it.

t - Tastes of oranges, citrus hops, tropical fruits, pineapple, mangos, and light pine hops and resin. No bitterness at all. Great taste.

m - Medium body and low carbonation. Easy to drink. Juicy mouthfeel.

o - Overall a fantastic DIPA; tried it close to Bodhi by Columbus and thought it was much better. Super juicy with a lot of hops and fruits, and no bitterness at all. Well worth seeking out.

Sweet Tangerine juice. Really well balanced. No notes of booze. Huge citrus juice nose. Almost like Five Alive. Orange hazy body.

Sosus

Look: The pour is clear, but the beer comes out a nice hazy orange, carbonation bubbles rise up to the two fingers of head generated by the pour.

Smell: The most distinct citrus smell I've gathered from a beer. I also get some dank, resin quality when searching further.

Taste: Tons of oranges, mandarins, some grapefruit, and a sweeter mango finish. Incredibly good

Feel: Medium bodied, with a drying slight bitterness on the finish. I was expecting a juicier feel.

Overall: An incredibly good beer. Having King Sue prior, expectations were high for another TG double IPA, and expectations were exceeded.

Poured into a tulip glass. A nice orange color almost looks like a glass of orange juice. The head was a bit thin but had a nice white color to it., lacing was beautiful and plentiful.

Once I opened the bottle I was hit with a citrus / tropical fruit scent that stayed with me the entire time I drank the beer.

This is one tasty beer, I am not sure how I would describe it but I must say this is seriously the Nectar of the Gods!!! Could really taste the citrus and a was very smooth, it almost had a juice taste rather than a beer taste. Filled my mouth with a beautiful hop flavor and my throat felt it was lined with a sweet candy once I was done with the beer.

DIPA is my favorite styles and I have to say SOSUS blew my mind away. I have had all the greats SOS, Heady, Pliny, Julius etc and to me Sosus is hands down my favorite. I am really thankful to have gotten to try this beer.

this is pretty special stuff, and definitely one i have been seeking out for awhile. all mosaic, these guys do some special stuff with citra, nice to see this at an equally high level, some of the best single hop beers in the world i have to imagine, not in any way wanting for a more complete hop profile, i dont know how these guys do it while so many others fail. this is hazy yet bright sunny yellow, not all that different than say king sue looked in the glass, not quite a full inch of white head. aroma of pineapple juice and orange, really lively and juicy, ripe and strong, minimally bitter, without any of the cat pee aroma we often get in lower quality mosaic beers. the flavor matches pretty well, canned pineapple juice for sure, more bitterness here, lime zest, orange juice, even a hint of oily mango sweetness here, lots of hop compounds swirling around in here. i like the grain base too, its perfectly round and smooth and substantial enough to support all these fruity mosaic hops, but not too big or sweet to get in the way. really well built overall. everyone and their brother is using mosaic and citra right now, the cat is well out of the bag on these varietals, but very very few use them as well as toppling goliath. this rarity is well worth the hype, just delicious on tap!

Sosus pours as you would hope it would. Bright but deep gold with a fresh, unfiltered look. Not hazy... floaty. The good floatie. Not a ton of crap in there. A rocky white head holds tight to the surface and sides of the glass.

The true shine of this beer comes right here in the aroma. Hints of tropical fruit, but some very exotic notes of gooseberry and prickly pear come through, as if Toppling Goliath squeezed every ounce of potential from these Mosaic hops.

And interestingly enough, those exotic notes don't come through in the flavor. Don't get me wrong, it's still absolutely great! Tons of tropical fruit, grapefruit, and a damp, dank forest. Again, just as I'd hoped.

It's rich, but smooth and appropriate. Nicely bittered too. The carbonation cuts it down a bit giving it a relatively soft and crisp finish.

Outstanding. Seriously, I don't need to elaborate much more than that. Thank you Joe, for another phenomenal brew. Cheers!

Smells INCREDIBLE. So dang juicy, hazy, just gorgeous. Was sitting on the couch with the beer on the side table and i kept smelling it from where i was sitting. So good. First sips of juicy bitter dank hop. Huge power dank on the tongue. This may be better than the king. I know they are different hop profiles but as a dipa this is crazy good. one of the best ive had id say. Had in from a bomber, poured into a 'Pulpit Rock tulip'. NICE
