In his most notable mosaic work, Sosus of Pergamon depicts doves sunning atop a golden chalice. The image was said to be so enticing that real birds flew into it while trying to reach their stone companions. This single-hop showcase is inspired by the beauty of divinity of the Sosus mosaics. Just as the doves discovered their golden nectar, discover the irresistible nature of the Mosaic hop.

I opened a bomber from the most recent release. The color is golden straw with a white haze.1 finger head and nice lacing. Nose is of cream, blueberry and sweet onion. Taste is amazing. It incorporates all the good sides of mosaic and adds the complexity of white tea with a touch of lime on the finish. Mouthfeel is perfect. Not pillowy but fine, impactful effervescence. This batch is amazing. It is my second bomber. I don't think one can do better with mosaic.

I received this in a BIF box from @swenny916. Poured from 22 oz. bottle (no evident bottling date) into Spiegelau IPA glass. It pours a hazy, almost opaque, golden-honey color with a huge, fluffy, milk-white head and lacing that resembles gelato. Huge smell of Mosaic hops with lemon, grapefruit, and lots of pine needles. This is a classic bitter, hoppy, DIPA smell. Wow, just superb! It opens with a blast of Mosaic (one of my favorite hops) that bites from the start. There follows a dose of tart grapefruit and lemon, along with bitter pine. Then, at the finish, there just a hint of tropical fruit and vanilla/caramel that takes the edge off the bitterness. Until, that is, the after taste, which is a Mosaic-lover's delight. It's off the IBU scale. This ale is crisp, dry, with lively carbonation, and at 8% ABV it's dangerously drinkable. Overall, Sosus is one of the best single hopped DIPAs I've had the pleasure of drinking. In a world of gimmicky, adjunct-laden IPA's, it's nearly perfect. It absolutely deserves its World Class rating!

A: Tangerine gold - hazy, not turbid - pours with a medium sized white head, fades to a wispy cap, retains a medium collar and leaves some really nice streaks and spots of lacing

S: Some bright citrus, with primarily orange flesh and zest, with some notes of grapefruit - floral citrus - leafy green hops and some green herbal notes - some tropical notes, with notes of mango and pineapple - some peach - some light sweetness, neutral malt base

T: Some juicy citrus, with orange flesh and zest, with notes of ruby red grapefruit - straight-up hops, like a packet of hop pellets, green and leafy, with some herbal notes and some dankness - under-ripe peach, hints of apricot - some fruit punch, notably mango, melon, and pineapple - some earthy notes, with a touch of woods, otherwise clean - soft pale malts, light sweetness

M: Medium body, smooth with some hoppy grit, mostly clean

O: Sosososos

If this is primarily Mosaic, then it does Mosaic better than just about everything I've tried. That being said, Toppling Goliath set the standard at an unfair level with King Sue. This is great, but I'm not sure if I will drink it often with the $16+ price tag. (I'd rather just drink Pseudo Sue).

Drank from a 22 fl oz (1 pint 6 fl oz) bottle purchased at Craft Beer Cellar, Belmont, MA
Served in a teku

Hazy light amber appearance. The body was capped by a fleeting, finger-tall, bright white crown that fell to a thin, bubbly collar. Streaky, drippy lacing trickled along the glass and lasted until the drink’s end.

The aroma was amazingly hoppy and punchy. Super fruity with loads of stone fruit and tropical notes. Peach and apricot dominated. Big overripe mango presence too. Quite sweet. Bit of honey. There was a potent cannabis-like dankness as well. The cannabis notes really intensified as the beer warmed.

The flavor profile was also impressive but not quite as smooth or as rounded as the nose. Citrus notes came through strongest. Loads of bright tangerine and clementine. Fairly tart and tangy. Bit of peach too. Slightly lemony in the center. Subtle dank cannabis notes were also apparent. More tangerine flesh and pithy citrus rind on the back end and in the finish. Hint of lingering bitterness.

Super light and fluffy mouthfeel. Quite unique for the style. The liquid contained an uber fine and fairly aggressive effervescence that frothed up nicely on the palate.

I have tried every Toppling Goliath Beer that has come into Massachusetts, and while some absolutely blew me away (Hopsmack), others were somewhat disappointing (King Sue). Sosus, however, definitely ranks up there as one of my favorites. With its big, bright, dank and fruity Mosaic hop notes and highly effervescent, lighter bodied mouthfeel, this would be a perfect DIPA for the warmer weather months ahead.
