The 11th edition of our rare and experimental small batch release is an Apricot Sour. We blended together barrels of one year aged Belgian Blonde ale that was inoculated with a third generation of our house sour barrel. In the beer’s last month of barrel aging we added over 25 pounds pounds of fresh apricots to every barrel. This gave the body of the beer a sweet, juicy character upfront while maintaining a complex spicy and dry finish. When consumed fresh the beer has a piquant apricot and melon aroma that is backed by the the warming vanilla from the oak along with earthy and funky tones from the evolving solera culture. Enjoy one now and save a few to cellar as this beer will continue to mature in the bottle. Pour with care, as this beer contains live yeast from refermentation in the bottle.

375mL bottle into an oversized tulip.
Cloudy peach/apricot-colored body. Oatmeal head. Excellent streaks of lace. 4.25
Smells like a peach cobbler almost. Vanilla and some butteriness. Could be diacetyl? Caramelly even. Tart fruitiness is attractive. 4
Seriously, something peach cobbler-like about this beer. Tastes like a tart dessert. Has a sweet caramel middle with a bit of a buttery flavor. 3.75
It feels a little oily and buttery and I think that undermines the beer a bit. The tartness is on point and I even appreciate the sweeter notes, but the beer is stickier than I desire and has some flavors and mouthfeel that clearly don't belong. 3.5
This was cool but could have been cleaner.

Slightly foggy but sparkling amber with fizzy off-white head that dies to nothing but a thin ring.
Smell is buttery pie crust with tart acetic white wine vinegar oak, apricot, and toasted sesame.
This one tastes quite sour and oaky on the acetic end, nearing vinegar, with apricot, almost smokey tannin, and white wine.
Crisp, quite acidic, but slick with a semi-dry finish.

Started out with very good apricot flavors, but I think this bottle was infected. Unfortunate.

Not getting quite the experience of others. The color is a beautiful peachy orange but too transparent, the smell is rather muted, the taste is fine but not incredibly apricot-y or sour, the mouthfeel is INCREDIBLY thin, and overall I think I got a bad bottle.
