A: Opaque red with a nice tan head.

S: Cherries and sweet port wine.

T: Good and tart but not more so than cantillon blabaer. Still though, a good kick in the glands. Fairly dry but a hint of port sweetness. Clearly a tart sour driven beer though.

M: Thin like a wild should be.

D: Pretty damn good. Among the better American wild ales I've had.

Picked up a bottle at City Beer Store last week, consumed on Thanksgiving day with dessert, shared with a few family members. Surprisingly, it went over very well.

Dark brown in the glass with ruby red highlights, this is one incredibly turbid beer. The bottle gushed a bit upon being uncorked, and poured with a thick three-finger head that fizzled away like soda until it hit a steady half-inch cap, which retained for the entire hour or so I sipped on my glass.

A funky cherry aroma greets the nose immediately, tart and ripe, both cherry skin and flesh. A wallop of lactic sourness backs it, and as it warms I get a trace of damp earth.

The taste is very lactic and biting up front, green apple and a ton of fresh sour cherries dominating the flavor. The fruit component is awesome. I get a hint of dark malts, but the lactic sourness and fruit flavor are incredibly pervasive. Acetic acids are pretty reserved here; this is all about the sharp lactic sourness, not unlike Russian River's Supplication. Crisp, medium in body but surprisingly refreshing and easy to drink. The finish is mildly tannic, vinous, and quite dry, making me think of a mellow pinot noir (that's gone sour) with a lingering flavor of cherry skin.

This brewery seems to get better with each new beer, this being by far the best I've had from them so far.

750 mL bottle poured into a Lost Abbey teku glass


This gorgeous looking, ember-red brew is one of the more compelling sour beers I've recently imbibed. Layered with complexity and seemingly disparate aspects, everything blends with a delicious singularity on the palate. The nose carries notes of cherries, oak and red wine vinegar, backed by a subtle undertone of grape jelly. The flavors are more tart-forward than the nose portends, but initial puckering sour quickly gives way to unripe berry sweetness and earthy oak. Suggestions of wine reveal themselves throughout the sip, but unlike many grape-infused concoctions, this one never loses is 'beer' foundation. Long finish with lingering notes of earthy oak and citrusy sour.

750mL (2012 project) into a tulip. Pours a deep mahogany w/ a 1/2-finger khaki head.

Aroma is sour cranberries, grapes, oak and vanilla. Sort of like a Flanders oud bruin.

Taste is tart, vinous and woody. Red wine, oak, tannins (a word I don't use often). Just the faintest suggestion of bitter dark chocolate. A touch more acidic than I prefer, but there's a really nice balance between sour and sweet. The oak barrel character is really dominant here.

Mouthfeel is medium bodied with soft carbonation.

Overall a complex, well-built beer. Glad I finally found a bottle of this.

A - Poured out a clear, burgundy color with a small, one-finger, khaki colored head of foam. The short-lived head left little to no lacing.

S - It smelled sour with dark cherries and red grape.

T - Great sour flavor punches you in the mouth with tart black cherry flavor. The is a very subtle caramel maltiness.

M - It was crisp and had a high pucker factor. A medium bodied sour ale.

O - This was fantastic. I've had 2 Cascade beers and both have been amazing.

2009 vintage.

Pours a slightly murky honey brown with a foamy khaki head that settles to a film on top of the beer. Small dots of lace form around the glass on the drink down. Smell is sour, tart, and funky with some fruity and wood aromas. Taste is much the same with a woody aftertaste and an acidic finish. This beer has a high level of carbonation with a very crisp and prickly mouthfeel. Overall, this is a great beer with some very nice aromas and flavors.

Bottle shared by John the other night. I preferred this over the version I had on tap.

Clear dark brown with reddish highlights, there a dense, light brown head with nice lacing. A gorgeous sour. There's a nice, bright raspberry/fruit vinaigrette with a rich fruit, mild cocoa. Quite New Belgium-like in some ways. Leather and earth are present as well. The palate opens quite sour with vinegar, apple cider and raspberry , very bright and tasty. The mid-palate has oak, leather and tannins, with grapes and grape skin tannins. The tannins linger on the finish. Medium in body, medium-light in body, this is excellent.

2009 project. Teku glass.

A: Pours a deep burgundy with hints of brown, an inch of burnt cream colored head which recedes moderately quickly to a sturdy ring. Excellent clarity, very good retention, and a few streaks of lacing.

S: A gorgeous marriage of lactic sourness up front, moderate funk, and a hint of red wine and red fruit and barrel spice.

T: Mouth puckeringly sour, at a medium-high level which stretches out through the finish. Notes of juicy fruit, funk, bright red wine, with a little oak and vanilla on the finish which really brings the flavors together. Clean flavors overall.

M: Fizzy, Pop Rock-like carbonation with medium-light body. Alcohol is extremely well hidden.

O: Excellent. Very drinkable, and I think on par with Sang Noir and other of the better Cascade BA sours.

Poured from the bottle into a snifter.

Pours a cloudy reddish dark brown with a layer of off white head that fades to a ring around the pour. Smell is a bit funky with some vinegar and tart wine. The taste is rather sour, I'm getting vinegar and berries. There is some dark funk in the finis. The wine notes are layered nicely. Quite complex.

One of two bottles acquired at the brewery release last Sunday. The story goes that the brewers realized one day that they had cellared more cases of this fantastic beer than they could hope to drink, and so decided to share some with us. Servus!

A: Cloudy & dark with hints of purple and brown. Khaki head - semi vigorous pour reveals very fine bubbles settles into 1/2 inch head

S: Nice and sour! Funky musty sour that makes your mouth water. Are you sure there is no brett in this?

M: Medium body. Big lacto on the front with caramel finish. Sour cherry and figs.

D: Could drink this all night.

Another winner from Cascade. Looking forward to trying it again in a year or so.

Poured a medium to darker and hazy brownish color with a smaller sized tan head. Aromas of cherries, some funkiness, musty, lighter vinegar, and vanilla. Tastes of woodiness, vanilla, cherries, and some fruitiness. Nice sour finish. I liked this!

Poured from a 750 ml bottle into a Bell's tulip.

A- Pours a murky dark ruby with a 2" tan head. Thick walls of lacing remain on the glass.

S- Dark fruits, cherry, vinegar, and a slight herbal/mint-like note.

T- Tart cherry, vinegar, very vinous flavors especially at the finish.

M- Medium body and high carbonation. Frothy and acidic.

O- 6/10 sour factor. Very good sour and the grapes give this beer sour a different and good flavor.

The beer is ruby / garnet hued with a finger or more of lacing after a careful pour.

The aroma offers barnyard funk, oak, and sour cherries, vinegar, booze. Complex and intriguing...

Bold flavor and highly enjoyable. A lot of cherry flavor really shines through. Misc. dark fruits, oak, wine, wild yeast. Yeah baby. Acetic without being harsh. Again, complexities abound. A delightful sipper. One of the better brews by Cascade.

December 9, 2011. This is the third time I've had the "2009 Project," so I figured it was high time to review it.

Pours a dark purplish crimson with a half finger of off-mauve head. Fine sticky lacing.

Very tart on the nose with strong red wine and sour cherry aromas. It's easy to throw around "red wine" when describing a dark sour, but this features a bright cherry, vinous tartness alongside lactic sourness. Minor balsamic, acetic acidity, but it doesn't distract.

Drier on the palate, but still imminently tasty, featuring lactic acid, maraschino cherry, cherry pit, and a good bit of oak. It's fine chilled, but really opens as it warms (and the metallic notes fall out). Cabernet Sauvignon grape, a milky sourness, and balsamic vinegar create a nice blend of sour, tart, and fruit. Dry and tannic finish.

The first time I had this I wasn't blown away, but the last two times it's grown on me. Very acidic, this is one of the most drinkable and nuanced "dark" American sours on the market. An oenophile's beer.

Dark cherry red with electric apricot edges and Champagnesque carbonation. The pastel gold head was large to start and looks like bubble bath as it deflates. The lack of a firmly creamy cap, and the fact that it leaves almost nothing of itself on the glass, is partially offset by great looking beer.

The aroma is an outstanding combination of cherries, berries, oak staves and lactic funk. If the beer's flavor is anywhere close to being as deep and as complex as its nose, look the hell out.

Raccoon Lodge and Brewpub Cascade Sang Royal is amazing beer that is kept from being even more amazing by a disappointing mouthfeel (see below). Whatever combination of blending and aging and cherry maceration went on, it worked out splendidly in the end.

The use of lactobacillus qualifies CSR as an American wild ale (per the BA description), but don't pop the cork expecting Brettanomyces horse blanket funk. Given the fruit vinegar vibe, it's more along the lines of a Flanders red ale.

110 pounds of Northwest Bing cherries should have added some sweetness, but the beer is tart, tangy, puckery and drying. Other flavors include a perfect amount of oak barrel woodiness, a red grape quality from the port barrels, lemon juice and cider vinegar. Sorry, but that description doesn't do this brew justice. Simply put... it rocks the house!

Given the style, the ABV and the barrel aging, appearance and mouthfeel deserve some slack. Besides, the initially fizzy carbonation settles down before too long and there's an underlying slickness that keeps things from feeling too light. Also, the cap never fades completely and there's some glass decoration in the end.

Cascade Sang Royal (Royal Blood) is an outstanding effort from a brewery that probably isn't very widely known outside of the Pacific NW. If you have any interest in beer of this sort, do whatever it takes to locate a bottle. Thanks a million to BKIII for sending me this one... just because he's a helluva generous guy.

Sampled at the brewery with Ron and Curtis, thanks again for the awesome hospitality guys, reviewed from notes, color is a dark ruby red color, one inch bubbly white head, decent retention, some light lacing, aroma consists of cherries, port, vinegar, various malts, lacto, caramel, wet oak, black currants, chardonnay, and sour apples, flavor starts off with cherry and wine-like flavors, more of the same in the middle, finish has a creamy fruit taste but finishes dry with wood, tart and fruity mouthfeel, medium bodied, moderately carbonate, could have drank the whole bottle as the alcohol was masked and it had a light feel, quenching stuff, glad we got to sample this as I was seriously eyeing it the day before at Bailey's, would like to drink again, recommended

A - Pours a dark brown that's pretty mirky and has a tan head which about 1.5 fingers. Some lacing is evident and a bubbly ring stays behind as well with some fizz bubble here and there. Really nice to look at.

S - Fruity tartness, dark fruit such as plums or raisins. A nice meld of both tart and sweet here. Neither overpowers the other in terms of nose, which makes for a nice combo. I don't get a lot of oak notes here even though it was barrel-aged for quite some time.

T - Tastes like it smells. A mix of sour apples, cherries, lemon citrus, along with some sweet raisins and plums. There are some oak notes here that also contribute to the overall balance of this beer. Really a great meld of flavors.

M - A little too much carbonation for me. The finish isn't as dry as I expected but that doesn't bother me at all.

D - Easy to drink and very tasty.

O - Definitely ordering more of these, very good

Enjoyed at Dyan's place the other night.

The beer pours a reddish brown color with impressive head retention and considerable lacing. There is a lot going on in this beer, as I pick up considerable sour, but with nuances of wine, cherry and grapes on the nose as well. The sour dominates on the palate, but this beer is quite vinuous, with a nice intermix of fruit and vanilla oak. Mouthfeel is fairly smooth, with a long, sweet and sour finish. There's something of tingling carbonation presence as well, along with some noticeable tannins from the fruit. As is typical with Cascade beers, the alcohol is perfectly integrated into the flavor profile, and so the high alcohol in this beer is not very noticeable.

The sour component seemed to come through a bit more in bottle format than on tap, though either way, this is a very fine beer from Cascade.

Pours a deep, deep mahogany that shows faint ruby tints around the edges. There's a huge frothy beige head with hints of pink in it and a very rocky bottom fed by bubbles throughout. The retention is fantastic with a thick cap and sheets of lacing.

Aroma is fantastic with layers of smells - brown sugar, tart cherries, oak, light earthy funk. Very sweet with the sourness only a complement in the nose, not dominant.

The taste is just as complex and just as good. Initial brown sugar and sweet tart cherry flavors stick around throughout with a sweet malt backbone. The finish is where the sweetness starts to lessen as the barrel character takes over with some port and spicy, dry oak.

The mouthfeel is medium to full bodied and highly carbonated, almost effervescent, which keeps the sweetness from becoming cloying.

I'm a big fan of wild ales that don't have overpowering sour/funky components. This fits the bill perfectly and I really enjoyed the huge cherry character. Wonderful stuff.

Big thanks to Dave from bringing a bottle of this to our crazy sour tasting. I had this at Toronado, but I was stone crunk so all I remember is that it was awesome.

A - Tons of foam on this one - a nice couple fingers of tan head that dissipates slowly to a thin cap and thick ring. Dark red/brown color that's very murky.

S - Dry red wine, port, overripe cherries, bretty funk, light oakiness, and a surprising touch of dank hoppiness. The combination of flavors is somewhat unprecedented for me but strangely compelling.

T - The taste is not quite as good, but still excellent. There's lots of red wine, cherries, light sweet port, smoky wood, and some strong sour and tart elements in the finish. There's no sense of the ABV in the taste at all.

M - Man - I must be in a cask mood, because I'm finding everything a little too overcarbonated for my liking. I'm getting some mounting warmness, but again it might be because of the mass quantities of sours consumed this evening. Nice dry finish and surprisingly clean.

D - This is another 750ml that I'd totally kill by myself. The only thing that gets out of control is the acidity, but otherwise this is amazing stuff.

2009 Project. Without further ado, I bring you Cascade Sang Royal.

Prying the cork out was a serious bitch. Pours exceptionally dark for a wild ale. Deep burgundy red-brown with a collared ring of beige foam. Man, can I get started with the aroma? Because, the sour whiff is just carrying off of this one.

A big oaky and sour aroma on this one. All sorts of refermented wine barrel drudge and bad grapes and wild yeasts. Brightly sour nose with lots of evident aromatic tannins, some acetic qualities, and a wild mushroom-y funk. Hints of blue cheese. Some twisted citrus with notes of unripe lemon, clump hay, tart raspberry, some leather, blackberry, red currant, and light tobacco. The malts aren't completely shot, either. As it warms, I get hints of contorted grains.

Oak, sour grapes, sour raspberries, acetic sour, tart currant, vinous notes, unripe lemon, mushroom, blackberry, pomegranate seed, rhubarb, blue cheese, tobacco leaf, and finishing alcohol. Super complex, just like the nose. I can't get over the journey that this beer takes me on. Has all of the satisfying vinegary sweetness of a real-deal Flemish Red with that smacking tartness and funky bliss of an American Wild Ale. So wine-like and almost savory in a way that it brings out the umami behind the tartness. Lots of tannins support the sour with mouth-drying bitterness; the only kind of bitterness that a beer of this style should offer. Weighty body masks its heaviness. After all these years, the carbonation still gives it a little pop--just like the pop the cork gave when I finally forced it free.

An excellent wild ale from one of the most impressive small-time breweries that I've come across. Lovin' Cascade from all the way out in Pittsburgh, PA. Somebody get in touch with me about a Kriek. I'm sold on these guys.

Consumed at our Cascade tasting on 12/11/2009 and poured into a snifter. The beer is dark reddish brown with a one inch off white head. Retention is good and scattered lacing can be perceived.

The aroma is malty with vibrant cherries and an upper moderate level of vinegar. The nose is earthy with notes of wet wood and moderate lactic sourness.

The flavor is tart cherries and cherry skins with a decent acetic presence. The beer opens up with a dash of sweetness, but this dries out midpalate with the arrival of damp earthen wood. There's a low tannic quality here as well.

This is the fourth bottle I've opened, and I honestly enjoyed the others a bit more. I highly doubt it's faded with the small amount of age that's on it, but the cherry was somewhat muted in this bottle. It could have been the environment, distractions, or my palate. It also could have just been this bottle. Either way, I think 3 of the 4 bottles warranted a 4.5 so I'll fault the beer just a hair because of this bottle.

2009 Vintage poured into a sniffer.

A: From initial opening of the bottle foam slowly filled the top of the bottle and poked out of the bottle spout. Oddly when pouring there is not much head, and what head is there faded fast. The beer looks like a dark murky brown with a light white film of head.

S: The first smell of this beer is so crazy, you can tell from the first sniff this baby is going to be sour. Major influences of the wine barrels and wine grapes in the nose. A touch of sour cherries in the nose too.

T: Such a complex sour, from one taste its tarty, the next its very sour, the next you think you might of took a sip of wine.

M: This had a very good mouth, left my mouth feeling very soured.

O: This bad boy is a rough sour, just the way I like it. I am going to see how long I can save this one. I dare say this one may be better then what comes out of RR.

A: 4 Pours a hazy, reddish-brown with a tow-inch, light tan head. Good retention and lacing.

S: 4.5 Aroma starts with a good amount of funk but it quickly gives way to chocolate, vanilla, bourbon, and a touch of cinnamon. These aromas are rather mild and compliment the funk and light vinegar rather than dominate the way a dark sour might.

T: 4.5 The flavors are a very nice balance of sweet and sour with similar characteristics from the nose, but a bit more muted. Unlike the nose, fresh fruit shines on the palate, adding cherry, raspberry, figs, and vinous grapes. As the beer warms, some of the darker flavors (vanilla, tobacco, oak) start to come through. The finish is a touch bitter and tannic.

M: 4.5 Nice body and carbonation with a slightly dry finish. Not much to complain about here.

O: 4.5 This is a superb beer: easy drinking yet complex. The really striking thing here is how different the aroma is from the flavor, yet somehow both come together in a balanced and interesting way.

750ml bottle from the fridge.

Pours murky maroon with with a mahogany hue. A fleeting spritz of white lively bubbles dissapeared almost instantly upon stopping the pour. Zero head or lacing thoughout the glass.

Aromatics lead off with sour cherries, vineous malt, and wet blanket. Hints of balsamic, red wine, toasted oak, and tannic must follow through.

Medium bodied with a mildly prickly mouthfeel. Sticky and a bit coarse.

Ripe cherries and bright acids start the palate. Vinegar-spritzed malt with vineous undertones follow though. Mildly funky with shades of oaky tannins, burnt pineapple, and caramelized cherry pits. Plenty sour and authentic.

Finishes with a lingering kiss of puckerness, deep red fruits, and oaky funk.

Wowza, great beer. I thought Cascade had peaked with the Apricot but this red is top-notch.
With beers like this coming out from Cascade, my cravings for Russian River are being subdued.
