This one-of-a-kind NW sour is a blend of Belgian strong blondes aged in white port barrels with raspberries, then blended with select barrels of strong blondes that were aged on the toasted meat from the apricot nut, or Noyeaux.

75cl bottle of the 2011 vintage, generously extra'd my way by Patrick. Thanks a lot. Opened up at Dustin's place on 24 August, poured into an unlabeled snifter.
Pours a cloudy golden brown colour, with an offwhite head that isn't particularly large or fluffy but is there momentarily, and disappears. No lacing to speak of.
Smells very, very, very sour. In a good way, but not like Beatification. Very lactic rather than acidic. Not much of the fruits here, just a mellow mixture of apricot and maybe raspberry. No cherries here. It just smells extremely lactic and it is awesome. I would have liked more fruits in the nose though.
It also tastes extremely sour. Mouthpuckeringly so. Its got a slight, sweet underlying fruity malt backbone that attempts to balance out the lactic acidity, but in a way it does not accomplish this. Yet, this beer is very sour in a good way. I think the flavour on this has passed it by over the past 2 years.
Mouthfeel is great. Medium bodied brew, awesome carbonation, feels great swishing it around in my mouth with the subsequent mouthpuckering. Clears off my palate very quickly and was perfect for the tasting. No booziness or heat here at all.
Ended up being very sour, not particularly complex and that is probably due to its age. I don't know how it was cellared since 2011, but it is delightfully sour and worked well as a palate cleanser in a pinch. I get the sense that this beer used to be more than this though, and would probably recommend trying this beer fresh.

2015 vintage 25oz bottle poured into a pils glass
Pours a very pretty apricot reddish-orange and incredibly opaque and murky.
Barrel and oak right off the nose and it stays like that the whole time. Apricot comes out a hint as it warms up
Tart, strong oak again and barrel. Raspberry tartness but less so of the actual berry flavor. Nuttiness comes out from the noyaux as it warms too.
Fairly light and easily drinkable for an 8.5%
Well worth my $12 and I'd happily have it again

Poured a beautiful deep, translucent orange with a finger or two worth of head. Little to no lacing.
Smells great. Big, sour citrus notes, not much beyond that. Warmed up to a spruce pine tone. Solid
The taste is where it comes together, super refreshing with a mellow apricot complementing the tart berry affront. Hints at oak and white grape for me
Effervescent, borderline champagne feel, soon sidelined by the spunk and funk of yeast cultures.
Very complex, surprisingly. good on a sunny late spring/early summer afternoon. Will most definitely have another. Delicious!

Pours golden orange and extremely fizzy to start most likely because it’s a 2013 project. Aroma is fruity and tangy. Taste is complex with hints of raspberry and apricot lined with the barrel. Sour ending and oaky finish.
