This one-of-a-kind NW sour is a blend of Belgian strong blondes aged in white port barrels with raspberries, then blended with select barrels of strong blondes that were aged on the toasted meat from the apricot nut, or Noyeaux.

Cage and cork bottle... 2014 project.

L: poured a beautiful orange where the peachy pink hue was clearly present and amazingly pretty. The head was minimal and a fine white color. The cool part was the peach color of the beer lit up the white head and gave it a cool peach hue as well. Looks phenomenal.

S: Very clearly a sour fruit mash. More subtle than many other sours. Apricot and oak barrel scent layered in to the beautiful massive sour scent.

T: Wow.... deeply complex. The sour hits early, but is moderated by a very smooth apricot. The mellow nature of this is off the charts delicious.

M: The carbonation is clear and strong for a sour. It bubbles almost like a champagne in the mouth. Alcohol is fully masked. The sour that hits up front mellows out very quickly and does not overpower the finish of oaky, berry, and apricot.

O: An ALL TIME GREAT sour. This is what other sours should be. I wish I could drink this every hot summer night on a fresh tap. Clearly there is something about this that goes well with a hot day, I might not ever want another sour. I will just take this on every time.

2014 Project.
Poured from the cork and cage bottle into a large snifter.

Pours a tranparent, strawberry blonde color with a white head that dissipates at a moderate rate. Some lacing is present and very little head retention, which is characteristic of the style.

Smells of lacto funk, farm berries, and not much else. Also very typical of the style.

The flavor is exactly what it describes. You get the raspberry tartness paring with the lacto and then the dryness from the apricot pit. Definitely a great combination that I have never encountered before this beer.

Mouthfeel is champagne like, with very prickly bubbles on the tongue. This beer is very light as far as viscosity is concerned, but bold on the finish like that of a Napa Valley Cabernet.

Overall an amazing brew from Cascade. Great balance of acidity and body, but allowing the flavor of the fruit to bring it home. I would crush this on a hot summer day like I was stranded in the Sahara.

Raspberries, apricots, wine barrels and strong ale- well, that's just nuts! But that's what we've come to expect from the Cascade Brewing team as this cleanly sour ale reaches across fruity lines and embraces the world of wine to its fullest.

Noyaux pours a peachy gold with tethers of light ruby in low lights. Resting in near stillness, the beer's embedded bubbles embrace a zesty and racy scent of white wine, cider, citrus, berries and stone fruit. Its taste is light in sweetness, offering a light confectionary tease with pulled candy and sourdough.

As the ale unfolds on the middle palate, a bold and fruity array assumes. Raspberries are the front runner, but nuances of cranberry, currant, peach and mango persist. The beer's natural lime, crabapple, lemon, passionfruit and kiwi flavors promote a cidery agenda that extends into oak aged chardonnay with a nutty, nearly buttery toastedness.

Light on bitterness, the beer's medium light body retains just enough carbonation to spring from the palate with a sparkling white wine zeal. Brazen acidity is off vinegar, clean, lactic and sharply piquant as the ale trails into a short aftertaste of fruit wines, and soft echo of sourdough and an earthy draft of burlap.

A: Poured into a Duvel tulip to a light orange with a slight reddish hue that is topped by a finger of off white head that fades to a small pool with some lacing
S: Smells of creamy wheat, sourness, apricots and raspberries.
T: Taste is apricots up front with some raspberries and pleasing sourness, nice creamy wheat flavors with some funk and oak. Swallow is more apricots and raspberries with some lingering sourness and creamy wheat. A little funk on the finish too.
M: This beer is on the lighter side of medium in body with a slightly slick mouthfeel. Carbonation is soft and slightly prickly. The beer has a dry finish from the acidity but the fruit additions try to keep it juicy.
O: This is one fantastic beer. Great flavors and complexity with a nice amount of sourness. Definitely one to try if you see it. Pricey but worth the cost of admission. I need more of this in my life.
