On tap at the Cascade Barrel House.

A - Pours a deep dark brown, almost black with tan bubbles forming around the edges that never leave.

S - Some booze, and spicy fruit.

T - Booze, bourbon, and funky fruit.

D - Slight sourness, but pretty mild and mellow.

O - I could have had this one all night, Opps, I almost did.

First had: on tap at Cascade, Portland, OR

Poured a clear, dark tea color with a patchy ringlet of a head. Aroma of cherries and tart blackberries, with a bit of spice and alcohol. Loved the taste; very complex with flavors of tart dark fruits, slightly acetic with a touch of funk, blatantly obvious leather, and smooth notes of bourbon-soaked oak. Medium body, and quite a nice drink overall, I must say.

On tap at Cascade.

Trace of white head, opaque black body.

Awesome tart, deep nose. Vinegar, strawberry, leather, and more.

Taste follows the nose. Magnificent tart cherry and strawberry with some malt vinegar, balanced sweetness, leather, everything I might want. Grape on the finish, and some chocolate-bourbon as well.

Smooth, but bright feel, quite nice.

Awesome bourbon sour; I wish I were around to find Bourbonic Plague proper.

This is another set of notes that has been sitting around for a while. I had this on-tap at the Cascade Barrel Room; although I was bummed that I couldn't try the finished Bourbonic, this and about 20 other sours were a pretty substitute.

Pre-Bourbonic has a dark brown body and a small, light brown head. Little bits of lacing are left behind.

The aroma has a lot of sourness to it, some sweet malts, lots of dark fruit, and a boozy, bourbon scent to it.

This beer manages to bring a lot of different flavors together quite well. The sourness is moderate to high, with a good bite and some puckering. Mixed with the sourness is a dose of dark fruit, with black cherry being clearly noticeable and pretty substantial. The sourness and fruit die down a little bit, and then the malt and booze comes through. Sweet malts mix with all sorts of barrel characteristics, from wood to vanilla to a noticeable bourbon flavor. A little bit of warmth in the finish, but the sourness really makes that hard to pick out.

Light, thin feeling body. Carbonation is moderate to high. Lightly and pleasantly puckering.

This thing is really good. A bunch of sourness is balanced with bourbon-barrel characteristics quite well, and every flavor has its place without being overpowered. After trying this one, I need to get my hands on the finished product the next chance I get.

Pretty good for a one-off unfinished batch. I assume these are the couple of barrels that don't make it into the final Bourbonic blend for some reason.

Pours a tree bark like hue with little carbonation, little head, but an okay lace (to be expected from cask). Really funky here, funkier than the finished Bourbonic. I like it this way. The sour funk really cuts the bourbon sweetness. Lots of stewed dark fruit. A little lean on the palate, alcohol is noticeable, especially on the finish.

Overall I liked it better than the finished Bourbonic, but perhaps the thinner body was why this went out for tapping. Any more time in barrel would probably have spelled death for the brew.
