Notes / Commercial Description:
Ale Refermented in Oak Barrels With Strawberries: Strawberries from Fredericksburg, Texas were added to oak barrels containing mature sour beer. The beer was then allowed to referment to dryness. Unfiltered, unpasteurized and naturally conditioned. The name Omniscience & Proselytism does not refer to any claims of inducing omniscience.

Lovely initial creaminess from strawberry, though this disappears after a few sips. Tart, oak, cedar, mild funk. Similar to Colour Five except for creaminess.

Appearance: Pours a nice sunset orange color with a nice orange-to-yellow fade. Okay lacing, good retention. 4/5
Smell: Bright strawberry jam and seeds, oak, hay, black pepper and a hint of plastic. A hint of lemon zest too. So jammy, so strawberry forward. 5/5
Taste: Strawberry jam, crackers, lemon rind, oak, hay and more strawberry on the finish. Although somewhat simplistic in how strawberry-forward this beer is, it has some nice supplemental complexities. Lasting strawberry fruit-by-the-foot finish. 4.75/5
Mouthfeel: Medium/medium-light bodied, spot on carbonation. Juicy mouthfeel with a very dry finish. Great tartness, mild acidity. 4.75/5
Overall: Wow. So...much...strawberry. This was better than Atrial Rubicite in my opinion, perhaps because I love strawberries so much. This is my favorite strawberry sour sampled to date.

Appearance: bright and translucent red bottled beer with one full finger of white head that drops down to no head.
Smell: This beer literally smells like a strawberry jolly rancher. Very appealing nose on this beer.
Taste: This beer tastes just like it smells. Strawberry jolly rancher all the way. Mild level of sourness. Not much funk. The strawberry flavor in this beer is probably the most authentic strawberry flavor that I have tasted in a strawberry wild ale besides Upland Strawberry lambic. It is quite well done.
Mouthfeel: light bodied beer with low carbonation. This beer is really drinkable. For having a pH level of 3.2 this beer is really easy drinking. It is not dry, rather the beer has a juicy mouthfeel and slightly creamy carbonation which pairs nicely with the strawberry flavors that it has.
Overall: This is a pretty nice offering from Jester King. Like I mentioned earlier, only one other strawberry wild ale has delivered a true authentic strawberry flavor profile like Omniscience & Proselytism has and that's Upland Strawberry Lambic. Honestly I like Omniscience & Proselytism better than the Upland Strawberry wild ale, but they are both pretty fantastic beers. Either way, Jester King continues to prove that they make some delicious sour beers! If you love strawberry beer you gotta try this beer. Plain and simple.

Pours a bright cherry, slightly hazy body with a bubbly white head that reduces fairly quickly to leave little lacing or retention.
Aromas are sharp and inviting.. big, juicy strawberry aromas upfront mixed with tart lactic, vinegar, oak, farmhouse funk, cherry, lemon. I could smell this all day.
Upfront the strawberry shines with a pretty acidic sour berry taste, lemony citrus on the follow through with a nice oakyness to compliment. The finish is tart, unripe berries, funk, and a sour fruity bite. Mouthfeel is light and easy to drink. Tough to sip this one!
Overall an outstanding beer, nicely balanced and very flavorful.

Probably the best strawberry sour yet. Still a bit weird in the taste, but doesn't have that awful medicinal taste/nose that is present in most/all strawberry sours I've had. Subtle, strawberry jam. Glad I've had it a few times now but wouldn't seek out again. Strawberry is just not well suited for beer I suppose.
