Notes / Commercial Description:
On brewday, we added raw, Texas wildflower honey from Good Flow Honey Co. in Austin, Texas late in the boil. After the first several weeks of fermentation, we added more honey to the beer. Finally, the beer was 100% naturally refermented in bottles, kegs, and casks using more of the raw, Texas wildflower honey. In addition to the honey, Bière de Miel was brewed with Hill Country well water, malted barley, malted wheat, and hops. It is 5.8% alcohol by volume, 3.2 pH, has a finishing gravity of 1.003, and is suitable for vegetarians but not vegans.

like all of jester kings beer, this one is artfully done, with a ton of wild honey in here, its a real unique brew. pale yellow in color, hazy and thick looking, like honey itself, with a tall white head, wispy and delicate, but long lasting. the nose is was less funky than other stuff from these guys, i get the honey not the brett and bugs first. its not sweet, but rather floral and pollen laden, and its strong. there is some tartness to the flavor, but this isnt a sour beer. wheat malt provides the base from what i gather, its pretty big too, fluffy but sturdy in texture. honey takes on a sort of white wine aspect to it as part of it being fermented down, with a little acidity and fruitiness there, but not on the level of their sours. this one seems reserved, more a showcase of the honey than of their house cultures. full body and still enough carbonation to cut it, honey lasts on the tongue after the swallow with a unique but not sour yeast aspect. overall an outstanding and creative brew. jester king can do no wrong right now.

edit: the bottle i had before must have been really young and underdeveloped or something, as much as i liked it, but i shared a bottle last night and it was extremely sour, like sour candy, almost caustic on the tongue and teeth in a good way. this definitely evolves pretty quickly in the bottle, i was shocked how sour and acidic it has become.

Pours a cloudy, gold colour. Smells like sweet honey, malts, Belgian yeast, and fruity. Slightly thicker mouthfeel, tastes of honey, mead, sweet, with fruity yeast. Like a Weissebier and a mead.
