A farmhouse ale brewed with alderwood smoked sea salt and oyster mushrooms grown by our neighbor Logro Farms. Logro Farms is located just a few hundred yards from Jester King Brewery at Ceres Park Ranch. They use spent grain from our beer to sustainably grow delicious oyster mushrooms.

A mushroom beer, what a strange one to have on Tavour. Man, it’s been a long time since I’ve had one of those. I’ve only had one, and it was over 3 years ago, an old bottle of Smuttynose Satchmo. I thought it was alright but weirdly watery. Now, if Jester King is putting mushrooms in a Saison, I have a much better feeling
Pours a cloudy pale yellow with 2 fingers of white head that fades to a ring and leaves minimal lacing
The nose is bright and funky, with the sea salt being the leading adjunct rather than the mushroom. I’m picking up on aromas of smoked malt, wildflower honey, sea salt, apple skin, floral hops, cracker, earthy mushroom, and light lemon zest
The earthy side of the funk is much more prevalent in taste, but is still wonderfully balanced. On the front end of the sip I’m tasting earthy mushroom, bready malt, apple skin, sea salt, floral hops, white pepper, light brine, and honey. The swallow brings notes of sea salt, wildflower honey, earthy wheat, smoked malt, cracker, earthy mushroom, lemon zest, and light black pepper
A light medium body pairs with moderate carbonation, resulting in a snappy and bright beer. Finishes bone dry with an earthy funk
This is super unique stuff, a really interesting use of mushrooms in a beer but it just makes sense style-wise. A weird but wonderful beer fitting for 4/20

Brewed with smoked sea salt and oyster mushrooms. There’s just this tremendous cap of foam atop this, and it looks fantastic.
The nose is beguiling, with a funky, earthy aroma. Petrichor comes to mind, although that doesn’t quite capture it. The sip is likewise intriguing, zippy and sharp with some of that earthy umami and a light salinity on the finish. Just over six months old. I liked it tremendously.

I like the can artwork, it's colorful. The pour is a hazy yellow. the mouthfeel is nice. The taste is earthy, mushroom, salt, white bread, lemon pith, grapefruit bitterness near the finish, along with some mild sour and barnyard funk notes. It was interesting to try a beer brewed with smoked sea salt & oyster mushrooms. Usually, I'm not a fan of this style of beer but this one was not too bad. Cheers! B-

(16 oz can, pkgd 05/04/23; purchased cold single at Pinocchio's today... poured into my St. Bernardus goblet)
L: pale jade-yellow liquid; tall tight sponge of white foam... no obvious sediment releases from the can, however, a misty haze does form within the liquid, giving it a cat's-eye glow... gotta be one of the cooler examples of label art I've seen
S: familiar floral, bready yeast aromatics, but with a delicate hint of seaside earth/sand; not knowing the smoked sea salt addition, one might pick up on a soft smoky phenol highlight, vaguely like those found in Islay Scotch; it hardly smacks you in the nasal cavities... it altogther has a diluted Dupont overtone; weak intensity
T: ooh, the palate (that first sip) is where it really gets interesting... the phenols (in the form of diaper and ash tray notes) leap forward, met with fuzzy colorings of melon rind, white grapefruit peel, and a certain horse blanket-meets-sourdough bread visage which upon stepping back almost does appear to be earthy oyster fungus... it almost begs for a wild treatment, but any more salinity or enhancement to the semblance of tart/funk might smother the subtle mushroom notes... it pops salty in the middle, while the bready malt fans out into the inner jowls, its more crusty elements to the palate floor
F: peculiar degree of near-nectary, oily/viscous roll up front and slightly so in the finish... the smoked infusion of the salt seems to separate during the sips and helps stoke a smoky warmth/sting on the palate roof... interesting; the most dynamic element of this brew?
O: one of the more interesting Saisons in this vein, in no small part due to the featured special ingredients... I wish they would push the envelope a little (or a lot) more with the mushroom (2220)

16oz can served in a little Hoppin Frog snulip. Can is dated 01/19/23. Got it in a trade with @MrSandman101.
Pours very clear pale yellow with a big coarse head, settles into rocky clumps. Looks pretty carbonated. Smell is funky with a little woody spice, some lemon.
Taste is lots of that yeasty funk with an earthy bitterness, lemon and grassiness. Light overall, surprisingly refreshing for something with mushrooms in it. I don't think I get any of the mushroom directly, I think it's coming through as that earthiness.
Mouthfeel is light, crisp, effervescent. Overall, this is a nice, light, refreshing summer beer, I would be happy to take a four pack camping with me on a hot weekend.

Pours the lightest yellow I think I've ever seen. Fairly clear and very carbonated. Aroma is hard to pin down -- salt is present but I detect notes of sour lime. Taste is thin with a floral character. For a light bodied beer, this has more than expected body and flavor.

Clear, golden yellow body; sparse carbonation; thin, frothy head, white. Slight wild aroma infused with fruity esters; green apple and pear. Light sweetness counterpointed with a light phenolic edge; mild fruity esters. Medium body; glass smooth mouthfeel; modest amount of dryness.
I didn't really pickup anything with smoked sea salt or oysters. An okay beer at best.
