Kollaborationsbiermittschechischemhopfenundwilderbakterienhefekombination (or Kollaborationsbier for short) literally means “collaboration beer with Czech hops, wild yeast, and bacteria” in German. The inspiration for the beer came from two sources. First, we really wanted to make a beer with Live Oak, which again, is a brewery we love. Second, another hugely inspirational brewery for us, along with Live Oak, is Brasserie De La Senne in Brussels, Belgium. De La Senne makes one of our favorite beers called Taras Boulba, which embraces principles of subtlety, restraint, balance, and full attenuation. Its elegant combination of European malt character, hoppiness, dryness, and yeast aroma and flavor sets a benchmark for what beer can be. Coincidentally, one of the few American beers reminiscent of Taras Boulba in terms of its malt and hop character is Live Oak Pilz. We knew that to truly make a beer worthy of claiming inspiration from Taras Boulba, we’d need to turn to our friends at Live Oak for help!

Had on tap. Pale yellow cloudy pour with a white head. It feels very delicate and smooth with slight wild paleness. However the other aspects are too delicate in my humble opinion. Barnyard funk with banana and lemon leading the nose with brett and grain supporting. Taste is made up of grain, flowers, brett and faint barnyard, with barely sour lemon and limes.

A - Pours out crystal clear, strong golden yellow, rocky white head, fairly quick fade to a small bubble cap that is persistent. Lacing is scattered small bubble clusters. A very pretty beer.
S - Soft farm grass and barnyard below a tart acidic front, a bit of lemon but largely undefined.
T - Follows the nose with a pungent, brisk lemony open, some grass and floral highlights over the honeyed malt middle, and a bit of funk and earthiness over the acidity in the finish.
M - Very strong carbonation, moderate weight, and a brisk, bright, clean finish.
O - This is a superb Saison, very approachable and quite drinkable. Tasty, and amazingly well balanced.

Pour a large foamy bubbly 2 finger head with moderate retention, a bit rocky head, light whisps of lacing, hazy light pale golden color
Nose is interesting, some farmhouse saison yeast funky notes, lots of esters with some banana, bubblegum, pome fruit, apricot, a hint of lemony citrus, grassy hay and quite floral like dandelions, lemongrass, some vanilla cake and ice cream, creamy doughy wheat, hint of tartness
Taste starts fruity again, tart fruit with lemon and sour apricot up front, pome fruit, mild bacteria souring with fair acidity, lactic acid, a little banana, doughy creamy wheat, with lemongrass, hay, a bit more of the floral dandelion like character, touch of phenol spices, and a bit more vanilla spice, some unripe tangerine, finishes fairly tart with a little flemmy note, with lemon and key lime pie characters lingering
Mouth is med to a touch lighter bod, med to higher frothy carb, fair acidity
Overall a nice beer

On tap at Sabatinis in Exeter pa this afternoon.
Looks pretty good. Clear golden yellow body with a decent white head. A little lacing.
Very belgiany on the nose. Spicy, yeasty, decent hop prescence.
Taste follows the nose with a serious dry note and elevated spice notes.
Mouth medium, finish bitter dry spice with a mild funk added.
Overall, a lot of taste packed in to a 4.2abv. Enjoyed the drink, but one at a time is enough.

Here's another beer from the end of the baseball season tailgate doubleheader in May '21. Had this after a coffee beer that was much stronger, and given that this stood out as very good, it must be really good.
Pours a standard beer issue yellow with an unfiltered appearance, 3/5" white head with stellar retention. Great yeast, honey, lemon, grain, sour wheat mash like aromas.
Taste is largely what I want saisons to be about. Avoids the trappings of being a wild ale first and foremost. Big time levity in the mouth feel, I dig these low gravity saisons as well. Light honey, hay, lemon, grain, tartness, citric rind feels all over this with none of them being strong or dominating. Very much close to a grisette for all the right reasons. Light brett/funk note of socks under a wet pile of hay. Just the right amount of carbonation. Really appreciate how this brings the kitchen sink of desired saison things with a low abv. Very well done, as good as almost any saison stuff going wrong.

Stone fruit, tree fruit, soft yeast spice, funky barnyard, and a grassy/weedy undertone in the aroma.
Lemon and lime tartness. Unripe nectarine or peach. Bitter grassy/aged hop flavor.
Light body, bright entry and mouthfeel. Medium-high carbonation. Bone dry, sour/tart finish.
Very Good.

Picked up a bottle at the brewery. What a fine piece of property! Has that Texas Hill Country feel. This is a lovely farmhouse beer. Has all the qualities you want and expect. A bit of funk, a bit of hay and barn, some fruit, and a tasty finish of earthy hops. Delicious!
