Bière De Blanc Du BoisBière De Blanc Du Bois
Notes: Bière De Blanc du Bois was brewed with Hill Country well water, barley, wheat, and hops. It was fermented with our unique mixed culture of microorganisms, which includes farmhouse yeasts, naturally occurring wild yeasts harvested from our air and land in the Texas Hill Country, and native souring bacteria. After extended fermentation and maturation in oak barrels, it was refermented with Texas-grown Blanc du Bois grapes. Bière De Blanc du Bois is 6.7% alcohol by volume, 3.2 pH, and has a finishing gravity of 1.004 (1.0 degree Plato). It is unfiltered, unpasteurized, and 100% naturally conditioned. The artwork for Bière De Blanc du Bois was created by our in-house artist Josh Cockrell.

Another home run for Jester King. This one drinks a lot like a nice sparkling grape juice with a nice little farmhouse funk on the finish. Tons of carbonation and perfect mouthfeel like a champagne almost.

Having this next to Blanc Blancs, I preferred this.

A wonderful complexity of white wine and saison quality. Grape seed and lemon seed tart qualities along with a medium minus funk. The beer reminds me of the balance of tart, funk, and saison of an Hill Farmstead saison, but with even more complexities.

Quite possibly the best beer from JK.

Bottle, beautiful golden straw with off white foam. Tart, oaky, citrus and wine grape. Light earthy funk. Delicate moderate carbonation and soft moderate carbonation. Blend Two.

On tap, on release day. Pours a hazy gold and thick head that dissipates quickly. Light body and refreshing throughout. Reminiscent of a Vinho Verde, extremely ripe and pungent with the Bois grapes shining through in the nose. Was unfamiliar with this type of wine grape, but I plan on seeking the style out after this. Really well balanced and dry finish. Fantastic hybrid and one of my favorites yet from the brewery. Kudos Adrienne, keep these wine inspired beers coming.

My notes below are truncated; I'm having this beer as part of a bottle share. Reviewed live at low altitude in Austin, TX. Shared by my good friend Dennis - thanks, buddy!

Expectations are high given friends' recommendations.

BOTTLE: Brown glass. Branded pry-off pressure cap. I dig the label art.

Side-poured with standard vigor as no carbonation issues are anticipated. Served cold into an Adelbert's stem-tulip.

No bubble show forms as it's poured.

HEAD: Thin head of white colour. Recedes inside 10 seconds, leaving no lacing.

BODY: Semitransparent translucent gold with copper and orange hues. Clean; no yeast particulate or hop sediment is visible.

Appears undercarbonated. Not unique or special looking for a sour, but appealing.

AROMA: Fantastically tart, with maybe a 6/10 sourness intensity. Clean Belgian pale malts are easily imposed upon. Mild farmhouse/barnyard character. The white grape aromatics are well-integrated.

Aromatic intensity is moderate. Very inviting and lively. Evokes a smacky wild ale with some funky brettanomyces yeast.

TASTE: Boy. It's nicely tart and sour - about a 6/10 in terms of sour intensity. I do want more intense sourness and funkiness, but it has a nice farmhouse character and barnyard undercurrent. Hints of grassy hops, hay/straw, brettanomyces yeast, and white grape, with a slight dampened oak character.

Very well-balanced and built, with nice depth of flavour and above average flavour duration. Average flavour intensity. It's nicely complex and subtle, with enough nuance from the grapes without ever getting too wine-like.

Cohesive, but not a gestalt build overall.

No overt hop profile, overt alcohol, or off-notes come through.

TEXTURE: Acidic, tart, smooth, wet, clean, sour, and delightfully smacky on the palate. Good overall presence. Near perfect carbonation. Light-bodied. Dries towards the finish.

Not oily, gushed, hot, boozy, astringent, harsh, rough, or scratchy.

Overall, this texture complements the taste quite nicely - bringing that wonderful smackiness - but doesn't elevate the beer.

OVERALL: I could easily kill a bottle or four of this in one sitting. It's a satisfying well-executed sour with loads of nice elements. I'd like a better oak integration and more sourness/tartness, but the white grape goes nicely with the barnyard build and this never ventures too far into saison territory. It's a lovely American wild ale and is well worth trying. Admittedly, there could be more complexity/intricacy and subtlety, but this joins the ranks of Jester King's best beers. Tasty stuff.

so few reviews here, this must be quite uncommon. man is it delicious, thanks to my homie for sharing it with us! its the white grape version of the tempranillo one they did a few years back. i have always kind of thought white grape lends itself really well to this type of beer, wild and funky, lambic or gueuze type stuff. that white wine fruitiness and tartness, acidity, all of it just works in really nice concert. always a little less directly fruity or pungently so anyway than red grape or other berries, but i think thats because it marries in so well, so beautifully integrated, that it stands out a little less. i smell the grapes a lot here though, nice with the wild yeasts and well proportioned wheat malt. funk and sour both appear to be there, and in fact are in the taste, but its more of the acidity and pucker up front, with the fruit and wood being amplified by the brett, which is rather mature for a newer beer. dry and carbonated like champagne, this sort of blurs the beer/wine line a little in terms of feel, its awfully dynamic with a nice sharp tang at the end. overall maybe not quite as intensely flavored as the tempranillo or the atrial or those, but its a really well composed beer, and i dont wish it to be any fruitier than it already is. gorgeous brew, takes me to summertime.

A - Poured into a Kate the Great tulip a nice hazy golden hue with a thin white head that fades to leave light wisps.

S - Aromas of sharper acidity, grape musk, light lemons, really nice barnyard funk . Nice white wine.

T - Taste is similar to the nose, there is nice white wine notes, good acidity, loads of grape musk, very nice funk. Good barnyard notes.

M - Mouthfeel is lightly carbonated on the thin side.

O - Overall this was a rather solid beer, nice grape musk funk. Still, this beer was lacking the subtle nuances of most fruited Jester King beers.

L: pale gold, a bit misty but about 80% clear, pushes up almost one finger of white whispy foam that dissipates quickly, keeps thin white/offwhite collar; a little activity in the glass

S: clean Jester King funk stripped down to basics -- lemon, lemon peel, some old barn wood collecting dust; as it warms, a lot of sweetness shows up, orange, apricot, tart apricots, kumquats; if a beer can smell dry, this one does ... smells like wine as you pour it, and that holds throughout the glass, even as the sweeter fruit notes arrive

T: funky wine ... good amount of Jester King barn must with a dry white wine kick, sour grapes, about two grains of sugar peek in, more musty barn yeast ... very yeasty ... some lemon peel, but it's not overly earthy; cooking wine or sherry come to mind; about 1/3 into the glass, the palate adjusted and beer warming a bit, the overall flavor starts taking on more of a sour/sweet white grape flavor ... dry, tart green grapes ... again, there's just a hint of sweetness but no more than a hint

F: light, crisp, easy to sip and get a full feel and easy to take a fuller swig and not feel overwhelmed; delightful

O: I tried it at the brewery last week and liked it, but I'm enjoying this glass poured from the bottle even more; the little hints of sweet fruit (orange, apricot) didn't show up in my 8 oz. at the brewery and they mix perfectly with all of the JK signature notes of yeast, musty barn, lemon, lemon peel ... and the aftertaste suggests the golding hops (aged I'm guessing) are still playing around in this one; it's the Cadillac of sours, tart and dry and loaded with character
