Notes / Commercial Description:
Foudreweizen took the DNA, so to speak, of one of our absolute favorite beers in the world — Live Oak Hefeweizen — and allowed it to fundamentally transform through mixed culture fermentation with brewers yeast and native microorganisms from the Texas Hill Country. The transformation was indeed dramatic! For the first few weeks, the beer was very reminiscent of Live Oak Hefeweizen, and had a lovely clove character. But as time progressed, and native yeast and bacteria became more dominant, the beer became funky and developed barnyard aromas. After two months in the foudre, a tartness began to emerge as lactic acid producing bacteria began to convert organic compounds into organic acids. Finally, Foudreweizen continued to develop more funk and acidity as it matured in bottles, kegs, and casks during the two months prior to release.

Foudreweizen was brewed on January 15, 2015 with Austin water, malted barley, malted wheat, and hops at Live Oak Brewing Co. As mentioned, it was fermented at Jester King with Live Oak’s Hefeweizen culture and a host of microorganisms in one of our oak foudres. It was packaged on March 8th, 2015 and naturally refermented in bottles, kegs, and casks prior to release. Foudreweizen is unfiltered, unpasteurized, 5.6 percent alcohol by volume, 11 IBU, 3.3 pH at the time of packaging, and has a finishing gravity of 1.004 (1 degree Plato).

Poured from a bottle on the day of release into a 2014 BBT snifter.

Appearance: Hazy golden, kinda flat looking, no head to speak of.

Smell: Prominent lactic tartness, hints of banana hefe base and wheat malts, jester King funk in there too.

Taste: Quite tart, lactic. Reminds me of das Uberkind in a way. Something that reminds me of a Berliner in a way too. The hefe qualities are subtle, but certainly there. This is lovely.

Mouthfeel: Thick and billowy, heavy carb and exceptionally drinkable.

Overall: Been anticipating this one a while, very happy with how it turned out. I'll be doing my best to stock up, this is awesome all the way around.

Poured gently at 46°F from a 750ml bottle (batch #2 - 02Nov16) into a tulip. Consumed on 17Jan16.
LOOK: Pours with a quarter fingers worth of white foam the shrivels into a line within 15 seconds. Yellow in color with an extreme amount of cloudiness. Rising bubbles are medium in size and subtle in quantity. Lacing is thin and hardly existent.
SMELL: Strong aromas of hay, tobacco, and sour green apple acidity entangle with mild aromas of grassy barley, oak, earthy yeast, and wheat. Whatever Live Oak Hefeweizen yeast that the beer was inoculated with cannot be detected.
TASTE: Very strong sour green apple flavors first strike the palate and are immediately followed by strong flavors of hay and mild tobacco flavors. Mild wheat and oak flavors continue the taste profile as the tartness of the beer grows slightly stronger. Mild earthy yeast and grassy barley flavors along with hints of bananas (there are those traces of Hefeweizen!) are the last to make an appearance as all previous flavors push on.
FEEL: Medium-bodied and highly carbonated. Goes down rough due to the carbonation. Finishes with a mild dryness. Sourness from the beer playfully agitates the tongue.
NOTE: A 4.5 out of 5 for taste, but the unappealing aesthetics of the beer and the poor mouthfeel really brought down the final rating. This was another incredible ale from Jester King. I love how well thier yeasts mixed amazingly well from the wort from Live Oak to create this beauty!

750 mL bottle. Hazy yellow orange. Smells of oak, wheat, and apples. Acidic, too. Tastes extremely oaky. Lemon. Wheat. Light phenolic flavors. Light body. Medium carbonation. Pretty nice, but not a very dynamic beer.

I am a big fan of Live Oak Hefe and this is a colab between Jester King and Live Oak which incorporates the Hefe yeast! Amazing beer! Nice light tart!

Pleasantly surprised by this beer! Classic hefeweizen flavors with a nice amount of tartness and a fair amount of sweaty gym sock funk. Was not expecting this to be so good!
