Synthesis Analogous was brewed with Hill Country well water, barley, wheat, oats, and hops. It was fermented with our mixed culture of microorganisms consisting of brewers yeast and native yeast and bacteria harvested from the air and wildflowers around our brewery, and refermented with raspberries and blackberries. It was packaged in July of 2015 and is unfiltered, unpasteurized, and 100% naturally conditioned. At the time of bottling, it was 5.6% alcohol by volume, 1.003 specific gravity (0.75 degrees Plato), and 14 IBU.

Do not drink this cold. Have had it several times, warmer is the better

Pours a nice berry color. Smells like sherry and not much else. When cold it tastes like a lightly tart sherry barrel aged saison. As it warms it really opens up with berries and a more balanced sherry tone. Overall very nice

Edit: 5/14/16: Have had this several more times from the bottle. Sherry heavy at first, but fruit and tartness burst through as it warms, excellent

Had this very tasty beer at the brewery. It was poured from tap into a large snifter.

Beautiful reddish garnet-pint color (hard to describe). Brief effervescent head and little lacing but this did not distract from the beer.

Smell and taste of ripe tart berries. Flavors of cinnamon candy and tart cherries. This beer is rounded out with a very pleasant floral mellowness that makes this beer very enjoyable.

Briliant red body with a pink tinted white cap that settles into a ring. Nose is potent jammy berries in a wild way with dark oak and flowers supporting. Taste bring the whiskey infusing the raspberry and blackberry, with rustic oak and barrel funk supporting. Feel is slightly darker and certainly more boozy, but nowhere near hot, feel is tart at most, limited acidity. Wonderful beer for the opening of true spring

I visited Texas, and Jester King was on the must-do list. I drank a lot of wild ales; most of what I drank resides in my cellar. I purchased this beer at the brewery and brought it back home. I am using a tulip glass; the pour created a foamy one-fingered head with no retention. The retention does not bother me because of the style. The color is a light reddish color with a pinkish hue. There is lots of carbonation and bright clarity. The appearance is beautiful.
Nosing the glass, I smell berries, sourness, a hint of the farmyard, a touch of fruity sweetness, oak, hints of whiskey, and light floral esters.

The mouthfeel is dry and puckering, The body is light, and the carbonation is high, with a pleasant finish.
This is a wonderful beer experience. The berries are not on the front of the palate yet, it harmoniously lingers with the rest of the beer. It has the perfect amount of sweetness, tartness, and finish. I loved this beer.

Would I buy this again? Definitely. This Jester King offering is way to rare to not have it if you can get it.

That said, both fruits (raspberry & blackberry) are very subtle throughout. The sherry barrels are more noticeable on the nose then the fruit.

Fruit is present in the taste & smell, but not overly noticeable - which is reasonable considering both fruits were on their second refermentation for this beer.

As a huge Jester King fanboy (they are my favorite brewery - by a mile) this beer would fall as a low-end "Top 10 JK beers" for me (#9 or 10).

Hazy without any sediment, the color is consistently dark salmon from top to bottom, with a fizzy off-white head that settles to nothing but a thin ring.

Smell is seedy blackberry and raspberry with softening peach and cranberry that are all nearly overtaken by an intensely complex oak presence that is like heavily roasted pecan, almost maple-esque. At the very back end is a hint of stinky cheese.

Synthesis is surprisingly juicy and jammy for a Jester King beer--I don't normally get that characteristic from them--but also sharply tart and deeply black peppery. This intense oak flavor is a very complex and completely appreciated contribution from the Sherry, which is still coming across as roasted pecan to me. Gummy apricot and notes of caramel corn-esque pie crust arise as it warms. The specific notes of raspberry and blackberry don't actually come through distinctly in flavor, but this is unbelievably drinkable for a fruited Jester King sour.

Feel is crisply carbonated, nicely tart sour, with a slick swallow but just barely semi-dry finish.
