Notes / Commercial Description:
Estival Dichotomous was brewed in June 2015, with Hill Country well water, two-row malt, raw wheat, spelt, and hops. After the beer had fermented for several weeks in stainless steel tanks, we added four different varietals of melon—cantaloupe, watermelon, honeydew, and galia—all grown by our friends at Johnson’s Backyard Garden. The melons were all cut by hand and pureed before being added to the tanks of finished beer in late July. The fruit and beer fermented to dryness over the course of another two weeks, after which it was packaged on August 17, 18, and 19. 2015 Estival Dichotomous is unfiltered, unpasteurized, and 100% naturally conditioned in bottles, kegs, and casks. It is 6.0% alcohol by volume, 27 IBU, 4.38 pH at the time of packaging, and has a finishing gravity of 1.000.

4 oz. on tap at brewery (Sunday, December 6, 2015)

L: yellow--yellow-gold, opaque; small head off short pour but some cool lacing

S: full of the Jester King barn must with a hint of melon sweetness; as it warms, full-on barn must and old fuggle hops, dusty burlap sacks, so earthy and musty; the slight melon presence is nice

T: big bitter earth taste up front, almost like licking dirt, but then come the melons ... not overly sweet but super tasty ... as your palate adjusts, the melon flavor really takes over, even showing some sweetness; the musty barn flavor mixes nicely with the melons as that base JK flavor lays down a firm foundation for the sweeter fruit flavors to dance upon

F: 100% beautiful ... what Jester King is all about, a big chunk of carbonation to fill out a light brew

O: very understated and very good ... once the flavors start finding their places on your palate and you adjust to that big dirt hop bite, it's as tasty and balanced as any JK brew I've tried. it's fantastic and a beer I would drink over and over and over again.

A: Pours a slightly hazed golden/yellow color. At first a one finger white head forms, and recedes rather quickly. Light lace is left behind.
S: Briny, pickle juice in the nose. Some fruits, but more rind like. Vegetal like as well. Not much yeast character that I can pick out, and the fruits are not very sharp or clean.
T: Follows the nose, this is more tart pickle juice. A brine character that I am not particularly a fan of. The melon, is more like the green earthy rind at the end. I still get that vegetal character as well. This is a mess.
M/O: A light body that is not as crisp as I would like. Actually, fairly disappointing carbonation. Not flat, but the bubbly effervescent bite that I love for the style is not at all apparent. Not much of a Saison, and not something I particularly enjoy.

My second bottle of this. I have had this much fresher, but the vegetal, rind, and pickle juice was still very apparent. I was hoping that was a bottle to bottle issue, or that it would clean up after a few months. Not the case. This is a pretty poorly made Saison IMO. The fruits don't shine, the yeast is pretty much nonexistent, and nothing is vibrant at all. Just a mess.

on tap at the brewery 6 November 2015, $6 for 12 oz.

Appearance: Hazy golden orange. Short head of bright white. Average retention and lacing.

Aroma: Designer bath soap: floral, melon, apple, cucumber, candy sugar.

Flavor: Vintage living room with some funkiness/mustiness and a pot of potpourri sitting on the mantle. Malt, mildly tart, floral, melon. Dry floral and gently acidic finish.

Mouthfeel: Smooth with a medium-light body and delicate, seemingly natural fine-bubbled moderate carbonation.

Overall: Another charming, interesting and curious beer from Jester King.

2015 melon edition tasted from a bottle. Pours a medium hazy amber orange with a smallish head. Aroma is a mixture of pepper and earthy saison characteristics, a light rind undertone and mild funkiness. Very interesting flavor, a complex blend of tartness and sweetness each from both the Saison and melon...crisp finish, interesting and delightful!

750 mL batch #2 08.18.2015 pours a hazed gold with a small cap of white head. Not much for retention or lace.

Nose is earthy honeydew, zesty - almost peppery yeast and a crackery wheat malt base. Im surprised how much the melons show through.

It is surprisingly tart, with an aftertaste that leans more honeydew than canteloupe. Watermelon...maybe, but the flavors meld together really nicely. The yeast really does a number on this one as it lends some funk and sourness to overall experience. This is quite good, perhaps even the best 'melon' beer I have ever had. Need to find moar of this!

I had this out of a bottle at the brewery. It poured a cloudy peachy-salmon with that signature JK head leaving behind a bubbly thick white blanket.

Scent was of Starburst, delicate subtle levels of spice and yeast totally shying away from any hint of barnyard funk. 2017 update: after aging this one for two years, the funk levels increased on the nose exponentially, bringing in notes of pumpkin, hay, and barnyard.

Taste is where I get the melons, which are smooth and gentle on the palate. They are present just enough to soften and round out the saison to absolutely scrumptious levels. 2017 update: again, after two years, taste is still shockingly bright and tart compared to the nose, with loads of Jolly Rancher melon, overall bringing a delicious, refreshingly crisp taste to this medium to light bodied, frothy semi-sweet beer that has a slight bitter grassy finish. There's even a slight hint of background caramel and toffee.

It was a hot day, a stressful day, the first time I had this, and drinking this made everything melt away. Such a dreamy brew.

Great sweet and melon aroma, pours into a hay golden reddish color with a thick creamy head. You taste the melon, but is not overpowering, the funk and tartness are just right in this beer. Another winner by Jester King.
