At Jester King, all of our beers reflect the conditions of their production: where and when they were brewed and fermented. The ingredients we use for brewing—Hill Country well water, locally malted grains, and native yeast and bacteria for fermentation—all evoke a sense of place. However, we also like to think that our beers evoke a sense of time. Most seasonal beers on the market are brewed to be consumed in a particular season. Our mixed culture fermentations, however, work at their own pace, taking several months to attenuate and develop complex flavor profiles, and don’t lend themselves to precise release dates. Instead, we like to make beers that, when finished, remind us of the moment they’re brewed and the conditions of their fermentation.

Autumnal Dichotomous was brewed in September of 2015 with Hill Country well water, two-row malt, Munich malt, malted wheat, rolled oats, and hops. In late November, the beer was recirculated through cinnamon sticks and Satsuma zest and juice, and refermented for another two weeks. It was packaged on December 7th and 8th. Autumnal Dichotomous is unfiltered, unpasteurized, and 100% naturally conditioned. It is 6.8% alcohol by volume, 28 IBU, 4.22 pH at the time of packaging, and has a finishing gravity of 1.002.

Visually giving the impression of dark peach juice, 2015 Autumnal has a massive, dense fizzy head that dies down to next to nothing after a while. This puppy was a gusher, it exploded upon opening like a shook up champagne bottle, even though it had been sitting for two months since purchase.

The cinnamon isn't specifically detectable, and it seems to do the work of actually bringing out more of a spicy, peppery Belgian yeast quality, the most I've ever had from a Jester King beer, in fact. Orange too was also not detectable to either of us. Instead, we actually picked up some apple and pear properties. All of these attributes were readily detectable in both the aroma and flavor.

A little funky, but overall quite tangy and spicy for a JK, maybe a little too much. As others have said, JK has set the bar quite high for themselves. While this is a good beer, they make many saisons that are leagues better.

Pours a cloudy dark orange with a two finger head. Carbonation just bursting from the bottle upon opening. Aroma is earthy apricot. Flavor is apricot jam, belgian yeast, mineral water and refreshingly zesty, peppery, cinnamon. Complex and unique. Really a nice beer I enjoyed at the brewery that I brought home and had 9 months later. A nice treat.

750ml bottle into an oversized wine glass. Cap comes off and the brew gushes all over my kitchen. The suds I salvage are hazy orange.

Aroma is fruity like the advertised orange, zesty, grassy, herbal with additional fruited quality.

Tastes fruity and pulpy with oranges, slightly buttery grain quality, herbal to almost medicinal. As it warms up, it tastes very mineral-filled and mealy.

Light in body and excessively carbonated. Not that good of a brew.
