2018 SPON Raspberry & Cherry is a blend of one, two and three year old 100% spontaneously fermented beer refermented with raspberries and cherries. For our 2018 blend, we selected two puncheons of SPON from 2014, two puncheons of SPON from 2015, and one 225 liter barrel of SPON from 2016. After creating the blend, we refermented it with 960 pounds of raspberries and 840 pounds of Balaton cherries. According to our HEAD BREWER AVERIE SWANSON, the cherry character of our 2018 blend is more prominent compared to our 2017 blend.
2017 SPON Raspberry & Cherry is our 100% spontaneously fermented beer, refermented with cherries and raspberries. We blended four SPON barrels from 2016 (about 1,500 liters) and added 800 pounds of Washington raspberries and 800 pounds of Michigan Balaton cherries. Like 2016 SPON Mourvedre & Sangiovese, we allowed the beer to referment with the fruit to dryness, then naturally conditioned the beer in kegs and bottles resting on their side.

This is delicious stuff and it bursts with fresh fruit. Not too acidic but also not sweet. Just the right amount of both. Smooth and refreshing, it is a work of art.

Cellared a year. Cherry red body with an off-white thin cap. Smell is the strongest element of this one: big tart and somewhat fresh wet raspberry and cherry with rustic oak, mild barnyard funk and straw. Taste however has the raspberry and cherry dominate with a sour and somewhat acidic way that verges on cough syrup, never gets fully there thankfully but this potency is out of balance for the style, reducing the funk and oak to mellow whispers in the shadows. Feel has the oak and sour acidity though, funk again fails to dry this out at all or really make much of an impression. More wild ale than lambic, but also for a series that is artful and refined, this one is off kilter a bit

Vintage 2018 - drank January 1st, 2019. Excellent raspberry. A bit dry, understated cherry. Beautiful pour - a wonderful deep purple. Nice tartness, terrific fruited funky nose.
