Back in November, 2016, Andrew Pogue and Geoffrey Barker of Fair Isle came to brew with us at Jester King. They brought fireweed foraged from around their area in Seattle. Fireweed is native to the Pacific Northwest and Alaska and is known for its culinary and medicinal uses. Andrew and Geoffrey dried the fireweed, which we steeped in the wort at the end of the boil.
After steeping, we cooled the wort and inoculated it with a blend of our respective mixed cultures. We added our mixed culture of native yeast and bacteria from the Texas Hill Country, and Andrew & Geoff brought their mixed culture with them from Washington. We pitched the blended cultures into the wort and allowed it to ferment in stainless steel for about two months before bottling the beer in early January.
Fair Voyage was 100% naturally refermented in bottles and kegs, unfiltered, and unpasteurized. At the time of bottling, it was 4.9% alcohol by volume, 1.002 specific gravity, 28 IBU, and 3.8 pH.

Hazed pale yellow with a massive, airy white head. Spotty, soapy lacing.
Wood, yeast, floral notes, hints of banana and green apple in the nose.
Sharp taste. Light green apple tartness and lemon is cut by a little soap, floral notes and more wood. They all combine with a metallic element in the aftertaste.
Medium bodied with prickly carbonation.
Sharp tartness up front is softened on the backend making for a pleasant sipper. Good stuff.

Pours a straw yellow, some haze from the sediment, minimal head and lacing. Herbal and lemon nose more like a tea than beer. Taste brings the JK bugs and compliments the nose components well. Sourness present but not overly so.

Aromas of blood orange, signature JK funk, slightly herbal, and a hint of spice at the end that is faintly reminiscent of cinnamon. Taste is funky citrus with a nice malty/tart interplay.

L: cloudy pale yellow, pushes up 3/4-inch head of fluffy white foam; no stick or lace, very thin collar; 100% opaque
S: lemon, lemon peel and sweet honeyed JK yeast; JK's dead hops are in there and alive enough to give off a slight cilantro aroma; as it warms, sweet enough to smell like candied lemon; loads of yeast
T: YEAST! earthy lemon peel, tart lemon, pinch of grain, no sweetness but the earthy flavor is tame enough to fall short of bitter; lemon peel lingers in aftertaste; some barn must
F: standard-issue JK perfection, light but loaded up with fluffy carbonation
O: great view into JK's yeast, simple and lemony and very yeasty; the fireweed may be adding to the hops in the aroma but otherwise hard to say if they're detectable; nothing elaborate but well made and tasty
