$ 13.77 (Including tax and discount)/750 mL bottle ($ 0.542) from Spec’s, DeZavala Road, San Antonio, TX. Reviewed 1/9/19.
Batch #1, January 2018 on label. 750 mL capped bottle on shelf in store, stored at 42 degrees and served at 42 degrees in a hand washed and dried Jester King snifter.
Appearance – 4.
Body – Light red-gold, clear.
Head – Large (Maximum six cm, controlled center pour), white, low density froth, fizzy, rapidly diminishes to three mm ring and a thin partial layer.
Lacing – Poor. Some small islands are scattered about.
First pour – Very light yellow, nearly colorless, clear.
Aroma – 3 – Weak and herbaceous.
Flavor – 3 – Slightly herbaceous with no yeast character. I’m not familiar with red sisho so I can’t assign the slight spiciness to it, but there is a definite pungent potential present in the immediate aftertaste. No alcohol (5.6% ABV), no diacetyl, no dimethylsulfide.
Palate – 3 – Medium, watery, soft carbonation.
Impression and interpretation – 3.5 - The label is practically a page from an Ishara test set. The brew is average in smell, taste, and palate. While not displeasing, it is mediocre enough not to warrant further purchases.

one of the more subtle jester king beers i have had, but fascinating. i love shiso leaf, currently taking a stab at growing a few varietals in the garden this year, its so unique in plant form, but it doesnt translate nearly as vibrantly in this beer as i thought it might, still, this is interesting and good, just mild compared to expectations and to the plant itself. pale, glazed looking, and heady from the bottle, effervescent in appearance but less lively and delicate when its actually in my mouth. a cool tea-like herbaceousness in nose and flavor, green and a little lettuce-like, not astringent or harsh or bitter in that way, not like juiced spinach or anything, but natural and sort of growing to me. i like the grain base of this, spelt heavy, earthy and rustic and awesome with both the shiso and the yeast, which both seem to lighten it up a little bit, despite this still having a lot of body, almost creamy to me. mild acidity, distinctive funk, and the unique shiso all well layered in, drinkable in the end, not quite as bubbly as i reckon it should be, but summery, intriguing, and a neat use of an odd ingredient for a beer. these guys just continue to impress me every time i get my lips on one of their creations! probably better fresh than aged, given the already subtle shiso...

I just had this new Saison from Jester King brewed with Red Shiso spice. The spice is very present, and the flavor is interesting, but I am not sure I like it. This spice would probably go better in soup. However, it was still a good and refreshing Saison.

Look: semi-clear golden with a thick white head

Aroma: distinct aroma that is floral, spicy, lemony, cinnamon aroma. The aroma is nice.

Flavor: It is difficult to describe the flavor but it is grassy, floral, spicy cinnamon and maybe licorice, but I am not sure, and then there's lemony tartness.

Body: light to medium body, refreshing

Poured from a bomber into a tulip glass. Fluffy white head with nice curtain lacing. Funky fruity smell and taste. Lemon, grass, sharp spice. Pleasantly refreshing!
