Notes: So what does this philosophy mean in terms of our latest batch of Noble King? Well, the beer initially surprised us — not in a good way. After being brewed in early March of 2015 and packaged by April 1st (somewhat appropriately), the beer had some off-aromas that we used words and phrases like “chlorine” and “shrimp shell” to describe. It was palatable beer, but not something we’d tie our reputation to and release. Rather than dumping it down the drain, we knew the beer would change with time because it’s alive and teeming with microbes that would take the beer down different paths over the long run. Now, after eight months since packaging, the beer has indeed changed to the point where we’re excited to release it! Among other attributes, the nose has become quite funky, and a nice, quenching acidity has developed.

This batch of Noble King won’t present like previous versions did at the time of release. The herbal hop aroma and relatively clean fermentation profile associated with younger Noble King is long gone. Funk and sourness are more prominent as mentioned. This batch is testament to one of the mantras we have around the brewery, which is “give it more time”. The mixed culture of microbes, not always, but often have a way of resolving a beer in the long run. This aspect of our beer making has resulted in our “new” batch of Noble King being released over nine months after it was brewed.

Look: It pours golden and mostly clear. It has a white head. Head retention is good.

Smell: It has some sourness up front in the aroma. It has some lemon notes with some floral and spicy elements. There are some grainy sweet notes as well.

Taste: It has lemon and spicy flavors with moderate sourness up front. There are some grainy sweet notes with low levels of pepper.

Feel: It has a medium body with a dry finish.

Overall, a well crafted saison.

L: A light blonde beer.
S: A light hoppy flavor.
T: A weird light citrus notes. Like a little brother to Mothership from Great Notion.
F: A simple hoppy beer.
O: Not interest.

Appearance – The beer is served a hazy yellow color with a small head of foam. The head has a decent level of retention, slowly fading over time to leave a little bit of foamy lace on the sides of the glass.
Smell – The aroma of the brew is nice with a sour note of apple cider vinegar and some bready malt. Along with these aromas comes a little bit of grain and yeast along with a touch of grass and yeast.
Taste – The taste begins with a cracker malt taste that has a moderate level of sourness. The sourness is mainly of an apple cider vinegar nature, but also has some sour notes of a green apple nature. There are some light harvest fruit tastes of apple and pear that are present upfront and which grow stronger as the taste moves forward. All the while some yeasty tastes as well as grass, herb, and some funk develop which in the end, leave one with a nice more sour saison like flavor to linger on the tongue.
Mouthfeel – The body of the brew is light with a carbonation level that is rather average. For the sour tastes mixed with the light cracker, funk, and grass the feel is great and makes this one more easy sipping.
Overall – A rather nice somewhat more sour saison. Quite tasty and satisfying for an only 5.3 % brew.

L: Poured from a bottle to a pint glass. Had a bright yellow color and a cloudy consistency. There was a half inch of foamy head that lasted an average amount of time. Pretty good lacing.

S: A good aroma of hops, a lot of barnyard funk, citrus, pine, and malt.

T: Tasted of a mild bit of malt (mostly in the finish), a good shot of citrus (lemon, mostly), a ton of the barnyard funk (quite pungent), some pine, and a surprisingly high hops content. This is an interesting flavor for a saison, mainly due to the hops content. It's a sweet, slightly funky, well-balanced flavor.

F: A well-carbonated beer with a somewhat slick finish. Light- to medium-bodied.

O: On the whole, this is a light and enjoyable saison. Drinkable.
