Notes / Commercial Description:
The first Jester King beer to be brewed entirely in oak. Unfermented wort was racked directly to oak barrels and inoculated with souring bacteria. From there, it spent months aging in our barrel room before being blended with live kombucha at bottling. Unfiltered, unpasteurized & naturally carbonated through re-fermentation in the bottle.

Large shared bottle.
Hazy golden body.
Unusual aroma with a funky component that's really separated from a pineapple-tropical fruit component.
Moderately tart. Limited Brett and funk. High complexity.
Excellent for style.

B2, bottle

This beer is very nice, but in the bottle i found it to be very sour which detracted from the kambucha imo. Has standard jester king funk on the nose, flavor is very nice with the kambucha, but its so sour. I thought this would be a saisony type kambucha beer, and maybe thats why i didnt absolutely love it

Poured from a b1 bottle into a Small Jester King wine glass.

Appearance: Clear yellow gold, next to no head. Appears flat. Not in the least bit hazy, completely translucent. That's how you can tell this is an older jester King beer.

Smell: Oak, tartness, hints of lactic cheesy funk, vinous. Reminds me a great deal of an oaky Chardonnay.

Taste: Cheddar notes, prominent oak, some grape notes. Really good. But milky on the finish. Really clean, tartness is just beautiful. Definite kombucha notes.

Mouthfeel: low to mid carb, very dry and easy drinking.

Overall: this aged very well, I was very impressed. Looking forward to it being brewed again.
