Notes / Commercial Description:
The first Jester King beer to be brewed entirely in oak. Unfermented wort was racked directly to oak barrels and inoculated with souring bacteria. From there, it spent months aging in our barrel room before being blended with live kombucha at bottling. Unfiltered, unpasteurized & naturally carbonated through re-fermentation in the bottle.

Poured from a b1 bottle into a Small Jester King wine glass.

Appearance: Clear yellow gold, next to no head. Appears flat. Not in the least bit hazy, completely translucent. That's how you can tell this is an older jester King beer.

Smell: Oak, tartness, hints of lactic cheesy funk, vinous. Reminds me a great deal of an oaky Chardonnay.

Taste: Cheddar notes, prominent oak, some grape notes. Really good. But milky on the finish. Really clean, tartness is just beautiful. Definite kombucha notes.

Mouthfeel: low to mid carb, very dry and easy drinking.

Overall: this aged very well, I was very impressed. Looking forward to it being brewed again.

Light fizzy head, hazy golden pear color.

Nose unique citrus, juicy apricot peach citrus thing, light musty dank thing, light grassy saison, pear, vanilla orange cake, little orange candy.
Taste semi sweet, lOts if citrus candy, orange vanilla cake, more citrus fruit, apricot and sour peach, tangy citrus fruit, light base malt. Finish is a bit sticky and juicy, more tangy sour peach and citrus fruit.
Mouth is med bod, little juicy fruit flesh, lighter carb.
