Das Überkind, our "old" Saison, is created by blending some of our favorite oak barrels of mature beer that were fermented with our mixed culture of brewers yeast and native yeast and bacteria harvested from Texas Hill Country: Unfiltered, unpasteurized, and 100% bottle conditioned.

L: Generic, deep rich blonde yellow.
S: Sharp, strong grass notes.
T: Simple, crisp, sharp saison. A bit of farm notes at the end but a very enjoyable drink for any usage.
F: A very well-defined saison.
O: A step above the usual Saison Dupoint saison with more details and clarify.

Bubbly golden clear body with a finger of white foam and lacing. Smells of french oak, grains, pilsner malt, lemon zest, pear, light bretty funk, and wild yeast. Taste follows, but the end has a corn pop flavor, tartness on the finish is very light and artful. Feel is bright, crisp, highly carbonated and malty on the back end with the oak.

This is a good solid saison that reminds me a bit of a geuze. I loved it and certainly will be buying again.

Served from a 25 oz (739 ml) bottle into a snifter at Growler's Beer Bistro in Tuckahoe, NY; blend #5, bottled June of 2018.
A: Pours a slightly hazy. amber color with a less than one half finger, off-white head, a solid ring of retention, but no appreciable lacing.
S: On the tart side of tangy with the aroma of apple, perry, caramel, and lactate.
T: Sweet to semisweet. Palate essentially mirrors the nose with little or no bitterness.
M: Light to medium bodied with low severals of carbonation.
O: Described on the label as a "Vielle Saison (Old Saison)," it seems more like a sweeter version of a Gueze to me. Whatever it is, delicious and enjoyed it.

S - Aroma is lemon, lacto funk and oak.

M - Medium body with medium/low carbonation. Soft mouthfeel with a bone dry finish.
O - A very nice wild ale. Light and easy drinking. I will definetly pick this up again.

Copper colored with a fingernail of off white around the rim and covering half of the top. The aroma is of brettanomyces and oats. I’m tasting a much more brettanomyces forward beer than the nose let’s on. There’s also just a touch of light malt and earthy saison yeast. The mouth is very dry, crisp, and moderately carbonated.

If brewers like Jester King would have it, they'd be bringing sexy back but in the sudsy forms. Proving that there's a market for the cyclical rotation of the days of ale gone by, their rustic saison proves that what's old is new again, over and over.
Pouring a translucent goldenrod appearance, Dad Uberkind leads with a voluminous honeycomb froth that nearly topples the tulip. Breaming with both funk and fauna, a familiar wine, cider and honeysuckle perfumes opens up the nose ahead of the earthen pungency of leather, weathered woods and damp hay. Washing the tongue with the effervescence of grain and gusto, a light honey, wafer and sourdough taste teases the early palate in a brief introduction of malt.
Once the sweetness bounces from the tongue, the tastebuds are open for the dried fruit peels of pink grapefruit, orange, lemon, apple, peach and apricot. An undertow of French cider and white wine teases the tongue with sourness while a spicy hop bitterness of pepper, pine and peat await the late palate.
Medium light in body, the brisk acidity, oaken earthiness and oaken spice all aids to dry the palate and usher in a fast fleeting aftertaste of hay, lemongrass and geranium. Meanwhile, an aura of funk floats about the retro olfactory senses with notions of cellar funk, attic woods and an overall gamey, mushroom-like character.

Made with such a deft touch, for something that could have been unwieldy in so many different directions, this is quite balanced and comes across as simple, very easy to drink and approach, but has great depth.

Blend #3. Macintosh apple, hint of lemon, some lacto and oak. Simple grain malt profile. A bit of funk, but this is balanced. Shorter finish. Perfect brew for a humid day like today. Light and refreshing. Not bad.
