Pecan Wood Smoked Saison Crafted in the once commonplace, Old World tradition of bière de coupage, young, dry hopped ale is blended with old, barrel-aged sour beer fermented with native yeast. A portion of the malt was smoked over pecan wood at The Salt Lick BBQ in Driftwood, Texas. Unfiltered, unpasteurized and naturally conditioned.
Update: Our original label application for Salt Lick Pecan Wood Smoked Saison was rejected by the Texas Alcoholic Beverage Commission (TABC), after having been approved by the Federal Alcohol and Tobacco Tax & Trade Bureau (TTB). We have renamed this beer "Censored" for sale in Texas.

2013 750ml bottle poured into a tulip appears a hazy golden color with a white head that persists.
The aroma kinda reminds me of chew spit at first than tangy citrus brett and smoked meats. Almost has a strange toothpaste character to it? Very unique.
It tastes earthy and yeasty with citrus and smoke thats mildly phenolic like plastic with some strange fruited aspect to the finish. So much going on in this brew, taking it in so many directions that I cant tell if I like it or if im just confused by it.
It is light in body with modest carbonation. A very interesting brew that I understand what they were shooting for and it sounds good but holy hell the flavors are all over the place. Yup, id drink it again.

Hazy yellow color with white head. Aroma reminds of a brett heavy saison. Taste is very similar to a lichtenhainer with the smokey-sour combination. The smokey flavors remind me of the traditional german rauchbiers. Very nice combination overall.

Look : Hazy sunny, deep yellow. Pours with good head. (Bottle left out on counter, uncapped, for about fifteen minutes, very slow foamy head developed out of bottle.
Smell : Light smoky nose, slight sour at end.
Taste : Starts light carbonation at front, transitions to a malty, wild yeast middle, then progresses to a smokey, sweet finish.
Feel : Light carbonation up front, medium body.
Finish: A little slow to roll off tongue: light pecan smoke finish .
Overall: Generally do not like saisons or extremely smokey beers; however, light pecan sweet smoke paired semi-sour beer paired pretty well. Definitely an unusual beer to try!

Pretty rough. Bad smoke, mild bandaid.
