Notes / Commercial Description:
Westbrook Big Tasty's Back Door is a remix on Stillwater's Cellar Door Saison. A number of herbs and spices known for their therapeutic properties are added to "expand the cleansing aspect of the white sage" in the original recipe. Then, at bottling, they add "brettanomyces bruxellensis for a funky complexity that will develop over time."

A: Pours a very lightly hazy medium amber/dark golden yellow in color with moderate to heavy amounts of active visible carbonation rising from the bottom of the glass and some faint medium yellow highlights. The beer has a two finger tall fizzy foamy bright white head that slowly reduces to a medium thick film covering the entire surface of the beer with a slightly thicker ring at the edges of the glass.

S: Moderate to strong aromas of white sage with moderate aromas of slightly tart wheat and cracker malts. There is a light to moderate aroma of barnyard funkiness and more herbal notes.

T: Upfront there is a moderate flavor of cracker malts and slightly tart wheat. That is followed by moderate to strong flavors of herbs with white sage really standing out. There is a moderate amount of funkiness from the brux along with a light amount of earthiness.

M: Just shy of medium bodied with heavy amounts of carbonation. Moderate to heavy amounts of dryness is present in the finish.

O: An extremely earthy and herbal saison that is very interesting without a lot of complexity to the flavor and aroma. Definitely an interesting beer and one that I would recommend. Easy to drink and goes very well with food.

The youthful exuberance of Westbrook and the stately saison makers of Stillwater collaborate on a "Remix" that combines the taste of the Belgian farmhouse with fruit, spice, earth and even added sage.

With a sweeter and fruitier balance, early perfume wafts about the nose and greets the tongue with confectioner's sweetness. Supple angel-food cake and citrusy spice allows a glimpse of bubblegum to emerge.

Making quick work of much of its sweetness, the middle palate transitions quickly toward high herb flavors of spruce, sage, pepper, clove, chai tea and juniper. Carrying a near gin-like taste, only a fading wafer-thin bread taste and a dry hop flavor of damp hay reaffirms its beer infrastructure within.

Its quick finish intensifies with herbal sage and pine while drying considerably to expose reisling-type acidity, earthen must and slight peppery warmth. Its early medium body closes with absolute dryness, making it effortless on the palate and stomach. Trailing sage and clove extend into aftertaste and rewarding the senses with an echo of bubblegum and wheat.

While hazy and peach in its hues, the semi-dense appearance is indicative of its early creamy and fruity sweetness, but is in stark contrast to its dry, acidic and earthy finish. Though its herbal presence is peculiarly of perfume, the farmhouse underneath is sturdy and impressive- I expect nothing less from these stellar breweries.

From tasting notes. L: As the hazy gold liquid fills the glass an explosion of bubbles rises to the surface producing a fizzy, 1” white foam collar that quickly recedes. S: It’s a sage nose, a very resiny sage and it has a big sage palate – very floral and herby. Traces of pine or juniper support the sage. T: Big orange palate with support from apricot and pineapple, traces of honey, and then a big sage finish with an herbal, resiny pine finish. F: Very effervescent, medium light body. O: A very refreshing herbal saison.

Served from tap in to a Trappe Door tulip. Poured a hazy golden yellow-orange with a one finger off-white head that subsided to a minimal amount very slowly. Maintained nice lacing throughout the glass. The aroma was comprised of sweet malt, sage, coriander, earth, funk, spices, medicinal, and subtle fruit. The flavor was of sweet malt, fruit, coriander, sage, funk, medicinal, earth, and spices. It had a light feel on the palate with high carbonation. Overall this was a pretty decent brew. The spices added to the base Stillwater Saison were definitely the star of this one. They were direct and in your face as one would expect from a beer like this. Really quite easy to drink even with the spiciness going on. Really glad I got the chance to try Westbrook's play on Stillwater's Saison. Now to get home and try Stillwater's play on Westbrook's Gose. Tick.

Overall: a well made beer. I appreciate the beer but it is not my flavor profile I enjoy in a beer.

Appearance: clear gold light head

Smell: herbs floral funky bacteria albanian sage tea

Taste: funky bret spices bitters complex all over the place

Mouthfeel: medium body
