Notes: This beer is a blend of mixed fermentation sour beer from two oak foudres. The blend was racked into 400 liter Barbados rum puncheons and refermented with passionfruit for six months before bottling.

A: Pours a slightly hazy pale golden yellow in color with heavy amounts of active visible carbonation streaming quickly from the bottom of the glass and faint bright yellow + straw yellow colored highlights. The beer has a finger tall fizzy off-white head that quickly reduces to a small patch of very thin film and a very thin ring at the edges of the glass. Minimal amounts of lacing are observed.

S: Light aromas of slightly sour wheat malts with minimal amounts of sweetness underneath slightly stronger than moderate aromas of lemon citrus lacto tartness. Moderate aromas of tropical/passionfruit and light to moderate aromas of wood with a hint of run spiciness. Overall there is a slightly heavier than moderate amount of sourness/tartness in the aroma.

T: Upfront there are slightly heavier than light flavors of slightly sour wheat malts with minimal amounts of sweetness and moderate flavors of lemon citrus lacto tartness. That is followed by light flavors of wood and hints of rum spiciness. Finally there are slightly heavier than moderate flavors of tropical/passionfruit. Overall there is a slightly heavier than moderate amount of sourness/tartness that lingers well through the finish.

M: Light bodied with heavy amounts of carbonation. Crisp upfront with a slightly heavier than moderate amount of acidic prickliness in the finish.

O: Pretty easy to drink (assuming that you enjoy acidic sour beers) with really nice flavors and aromas from the addition of passionfruit. Enjoyable though fairly sour and there is just a light hint of the rum barrels present.
