Notes: This very special edition of barrel-aged Mexican Cake was aged in maple syrup (previously bourbon) barrels for 18 months, then racked into fresh maple syrup barrels and aged for another 4 months. Finally, the beer was conditioned on toasted coconut, cocoa nibs, habanero & ancho peppers, cinnamon and vanilla beans.

This one pours a very dark black color, with a small head, and a little bit of lacing.

This smells like sweet and sticky maple syrup, pepper hear, rich melted chocolate, sweet coconut, oak, and bourbon.

This is just massive and decadent, and works really well. The two different maple barrels really do lend a tremendously sticky and rich maple experience. It's miraculously not too sweet, though, and that's definitely helped by the dry pepper heat and slightly sweet cinnamon spice that sort of meld together to put a bite on the end. Coconut also plays a major role here. i don't get a ton of vanilla, but the cocoa nibs help make fudge up the base beer and provide a solid base for all the additions to make a play. There's only the slightest hint of bourbon, but I definitely get some warming oak spice.

This is medium bodied, and very silky and creamy, with a great drinkability. There's no real booziness to it.

Every Mexican Cake BA variant I've had has been markedly better than the base, which has never really been a favorite of mine. This is so decadent, it almost feels like I shouldn't be drinking it. As a big fan of maple syrup in all forms, this hit every button for me.
