Notes / Commercial Description:
Thomas is the third installment in our "Bearded Farmer" series of saisons. In keeping with the farmhouse brewing tradition, each successive beer is brewed a little (or a lot) differently than the ones before it. Thomas is brewed with pilsner and Munich malts, hopped with New Zealand Wakatu, Motueka, and Pacific Gem hops, and fermented with a single French saison yeast strain.

750 mL bottle poured into a snifter.

Appearance - Hazy bright orange. Big white head. Thick collar and very nice surface foam.

Smell - Very grassy. Herbal. Smells almost spiced. Appley esters.

Taste - More herbal. Lots of malt. Kinda bitter. Very herbal in the finish.

Mouthfeel - Medium body. Bitter.

Overall - Eh. Bitter and malty. Really herbal from the hops.

The beer pours out in a hugely hazy beautiful marigold/orange with a huge huge bubbly head.

The aroma is an explosion of so much. It hits you with an initial green dankness of almost marijuana. It then moves into sweet and sour lemon juice, wheat, and funky wet hay.

The flavor on the other hand is a bit one note. It flows of a good wheat body that has lemon, spicy notes along with a funky barnyard note. There's a good sourness with a decent dry finish, but in general, the flavor is a bit one note.

A hugely hoppy and interesting take on the traditional French saison style, but the flavor did not hit the notes for me. The carbonation is actually really lacking on the palate despite the huge head from the pour.

750mL bottle poured into a snifter.

(A)- Pours a very murky and cloudy goldenrod amber color. Very minimal white froth.

(S)- Very bone dry with a slight bit of a lemon grass funk and very subtle mineral saltiness, which is actually quite nice.

(T)- Again, quite dry with the yeasty biscuit up front. The lemongrass is still there only with a slightly more vibrant orange peel finish.

(M)- A zesty carbonation level. it gets to be a touch bitter but balanced well with the dryness and citrus.

(O)- A pretty solid saison. The dryness is welcomed but the yeast profile is quite potent as it opened up.
