Thomas is the third installment in our "Bearded Farmer" series of saisons. In keeping with the farmhouse brewing tradition, each successive beer is brewed a little (or a lot) differently than the ones before it. Thomas is brewed with pilsner and Munich malts, hopped with New Zealand Wakatu, Motueka, and Pacific Gem hops, and fermented with a single French saison yeast strain.

Received as an extra so probably drinking past its prime. The carbonation was, to be generous, ample. To be more precise; apeshit. The smell was spicy and substantailly yeasty / malty. This smells like a fall beer. Those beautiful NZ hops are, sadly, gone. Taste delivers more of the same ... a spicy, malty, slightly overcarbed saison. tasty but not superlative.

Brewed in the style of a Saison / Farmhouse Ale. Available in 750 ml. bottles and on limited draft.
Poured from a 750 ml. bottle to a tulip glass. Served above 54 degrees Fahrenheit.
(Appearance) Pours a crisp, frothy dirty white head over a pale amber body with mild haziness and ample, lively carbonation. Retention is below average and lacing is light and spotty. 3.25
(Smell) Cracker and bready malts, light grains and soft unmalted wheat with a tart, mildly tangy fruit yeast profile, green apple, white grape must, lemon zest, delicate clove and light peppery spice. 3.5
(Taste) Dry cracker and grain malts, clove, bitter apple, fermented grapes. Very dry and yeasty with sharp edges but very light on mid-range flavor, malt body and short on balance. 3.25
(Mouthfeel) Texture is lightly grainy, musty, very dry. Carbonation is high, generating a moderate frothiness and a fully crisp finish. Body is short of medium for the style, shy of medium overall. Balance is yeasty and fruity over sweet. Alcohol presence is light and there are no notable off characters. 3.5
(Overall) A decent saison/farmhouse ale but one that has certainly peaked a while back, dried out a good bit and lost a lot of its flavor range. Despite the downside of the age on this beer, it happens to be enjoyable, especially if you like the tangier and more vinous fruit profiles of yeasty saisons. 3.25
