Notes: We always like to imagine that all food and drinks could be beer, and especially that most precious and revered of substances, wine. So, we decided to produce a Belgian Tripel style beer that is aimed at replicating a crisp wine, using a “melody” of wine yeasts to ferment the beer. On top of this we chose to use Hallertauer Blanc hops for both kettle and dry hopping to produce the grape, pear like flavours we desired. A touch of Flaked Rye gives a spice kick, with the Pilsner malt base giving a clean finish that helps to balance the flavours.

A: The beer is clear dark golden yellow in color and has a moderate to high amount of visible carbonation. It poured with a finger high white head that died down leaving a collar around the edge, a pillow of bubbles in the center, and a short head on the surface in between, and thick lacing down the sides of the glass.
S: Moderate aromas of Belgian yeast are present in the nose along with notes of green grapes.
T: The taste is very similar to the smell, but the green grape flavors are stronger and there are also notes of pears with hints of spices towards the finish. As the beer warms up. The spices subside and the green grape flavors become stronger.
M: It feels a bit shy of being medium-bodied and a bit dry on the palate with a moderate amount of carbonation.
O: This beer seems to be closest to a Belgian Strong Pale Ale with some fruity notes of grapes and pears. The alcohol is relatively well hidden.

a unique belgian tripel type thats really vinous for not using wine grapes, slightly funky, but not fully wild more like wine lees conditioned in the bottle or something, with a really interesting fermentation profile that goes well beyond the classic belgian complexion, neat esters, heavy pear and australia or new zealand white wine with the tropical elements to it, sexy in that way, but the booze and the sugar here both end up being a lot, lively as this is in terms of carbonation and as light as the body is for what this is, it still feels like a ton of beer, a little fusel and quite sweet, especially with the perceived sweetness of the winey elements, pears like from the can, lots of cool esters too, mostly when it warms up, but its intense, and benefits very little from being as strong as it is, except maybe a perceived fanciness or something, it doesnt do anything for flavor or complexity. a little green and red apple and cider too, neat yeast character all the way through it, and the hallertau blanc hops are obvious in the finish, an orange twist or even orange liqueur note there too and a little funk. delicious beer, huge, lively, unique. these guys are near the top of the heap these days. this is well thought out and executed!
